Cooking during Covid Lockdown in New Zealand!: I got home from work and my mum said: "You're cooking!" She had already gone to get all the ingredients required from the supermarket and had them laid out on the kitchen bench for me. It didn't take too long to complete and once it was done my isolated parents were utterly satisfied with the dish! Thankyou Marion! It was a pleasure to cook this, especially during Covid lockdown 😊

My grandpa took me for some Thai fried rice in the 80's in Los Angeles. It was the best. Light, airy, fluffy. Not too greasy. No other asian fried rice have ever compared to it.

Yes, So similar to an Indian biriyani except for the fish sauce that is not added in biriyani. Awesome as always 👏

With Thai "socarrat" that everyone seems to want to get more of! Isn't it nice, so many cultures love the crispy, browned bit of rice at the base of the pan or pot, that's often the yummiest bit!

Temper your spices in the oil first before adding the onion. Makes a whole difference.

oh my god I am from Malaysia and when my friends and I went to Hatyai in 2018, we were full but we still wanted to try this one so we only bought one pack. WORST DECISION EVER! It was so amazing and flavourful!!!! After covid i am planning to go to Thailand again just to buy myself 2 packs of this!!

Looks delish! I follow a lot of chefs and cooks on youtube, love watching them all but Marion's recipes are the ones I tend to try out for myself and they always come out great. Pretty much everything I've cooked for the past month has been from here (although I tend to tone down the spiciness since my delicate Icelandic palate is just not made for hot chilies).

It is definitely a version of Indian Biryani but we don’t use curry powder (did not know something called curry powder existed until I moved to the US) instead use various combinations of whole and ground spices and no tomato in general.

I have an idea Marion. instead of curry powder, i add green curry paste, or red or yellow, instead, also add a touch of coconut milk after adding the stock, also fry by using coconut oil how does that sound

That pot of charred chicken and golden rice when the lid was lifted off made me moan and salivate. Honestly, looks like one of the best I’ve seen on this channel and I’ve watched dozens and dozens of her recipes. Making a shopping list.

I made this and it tastes delicious but il bummed. The chicken skin didn't crisp nicely it just got stuck. It was on pretty high heat. I didn't touch it for the cooking time. And the rice just got burned and stuck to the bottom :( what did I do wrong? And after 25 minutes after removing the cover there was still quite a bit of liquid left. Used a regular SS skillet

I usually use my favorite salsa and add the extra vegetables that i like to the left over rice. Add the Peri-Peri(Nando's) sauce to give that extra kick and mixed shredded chicken pieces before finishing it. Air Fried the marinated chicken with spicy seasoning and maybe sour cream or Tsaziki sauce to balance the flavour. Consistent and fast results.

Hung Nguyen I can tell you from my Indian point of view of cooking. There is not a specific kind of yogurt for cooking but we use the regular PLAIN UNFLAVOURED yogurt ( not vanilla flavoured or any kind of added flavorings). It can be low fat or whole and it can be Greek style too. Hope this helps🙏🏽

Ever tried roasting some thing in the marinade? Guess what ...it will blow you away, i did it with lamb , similar to this with chicken..tricks of the trade....meat not only cooks in it and absorbs it all but it produces some good gravy ingredients to mess with..ill try it with this already know it will work...And yup you ca bake rice in the Broth....just make sure the broth is brought to a boil before putting it in the baking dish...

Only suggestion I'd give here is, that the whole spices should be added in the oil before onions and tomatoes go in it. That's when their flavor will be most effective

Spices would be too cooked by the time onions and tomatoes cook down. It only needs to be added to heat to release oils. Not cooked. Unless remove spices first then added back.

@@main2333 Adding spice directly to the oil is south-east asian style of cooking (India,Bangladesh, Pakistan etc). They don't burnt actually if cooked in right way. However I think each cuisine has its own style of cooking,just added a bit data here. Happy cooking to all during this sad quarantine 🤗

Oh my! This really is like a mini baby version of biryani along with pudina chutney (the mint dip) In Mumbai there are street hawkers that sell veggie sandwiches with that chutney and butter smeared on each bread slice, loaded with boiled potato, onions, radish & cucumber..... It's a favorite among college students on a budget ;)

Just made this and it was super good💯 my grocery store only had Serrano peppers so I only used half of one (for the mint chutney) and it was SPICY, let me tell you! Super delish, bright, and zesty, but it got my nose running for sure.

I made this for lunch today, it’s much simpler than the usual recipe (Marion’s recipe used curry powder instead of Khao Mok Gai spice) but the flavour was awesome! Living near the Southern Thailand area, I always traveled there by train for a food escape in the weekend and I miss doing that.
