Holy moly!!!! Made this last night and it was amazing! I couldn't find any cinnamon sticks so I used 2 tsp of powder and instead of chinese cooking wine I added 1 tbsp of mirin. Turned out amazing and husband loved it very much! Suprrising super simple.

Your braised pork rice looks super delicious and thank you so much for sharing our national dish with everyone. ❤ Also, I love that you used pork cubes rather than pork mince, which is the most authentic way! Chopping the pork takes a lot of time but the texture of these cubes is so much better than minced meat.

I prefer to cook the pork in the boiling water for about 5 to 10mins 1st to get rid of the scum. One extremely important tip is that you want to cook till there's as little water left as possible so not on my the flavor will be more concentrated, but also it can be preserves for longer. Dont be afraid of the pork fat/oil that where the flavor is

Just one suggestion: The soaking liquid for reconstituting the dried mushroom should not be thrown away but can instead be part of the water used for the braising sauce. The mushroom soaking liquid is full of flavour.

I’m Hmong and we have a dish like this too!! We call our’s “sweet meat”. And we usually braise the hard boiled egg separately in the sweet thick soy sauce so they’ll be braised almost all the way through like tea eggs. Yummy!!

I'm used to a version with more liquid in the stew. And at the end you add in crispy fried shallots, that takes it to the next level. And gives it the "古早味", or "old times flavor".

This is delicious! I made if a few times and it's always been a hit! It somehow reminds me of my grand-mother's Vietnamese caramelised pork (which is now my signature dish LOL).

Yes the dark sweet soy sauce adds the caramelized goodness in this dish. Don't forget lots of fried shallots too, let them cook until they melt into the gravy.
