Beef tongue is good! Had my first tongue burrito in the 80s from King Taco on a summer day after my dad finished working on a car in Northeast LA. Those were our humble days.

Beef Tongue is underused in many cultures. My background is German, so it would be started much like you've done. But would slice the meat thin and serve it with a warm creamy horseradish sauce of sweet/sour like sauerbraten. Thanks as always, Marco, always enjoy your cooking..
