Recipe:
Ingredients for 2 - 3 portions:
200 g onions, quartered
20 g oil
300 g tomatoes, diced
1 ripe avocado, diced
30 g lemon juice, freshly squeezed
½ - ¾ tsp salt
¼ - ½ tsp cumin
1 - 2 pinches of chili powder
2 - 3 pinches of pepper
1/2 bunch of parsley, picked
400 g black beans, rinsed and drained
Put the onions in the mixing bowl and chop for 5 seconds/speed 5.
Push down with the spatula.
Add oil and heat for 5 minutes/100°C/speed 1.
Meanwhile, dice the tomatoes & avocado and put in a large bowl.
Add the lemon juice, salt, cumin, chili powder, pepper and parsley to the mixing bowl and mix for 10 seconds/speed 4.
Add the dressing and beans to the bowl and mix well.
Season the high protein salad to taste, let it sit for a while and serve.
