Any of the El Montery chimichangas are great - micro them add a slice of cheese for the last 30 seconds then serve with a side bag salad. SO easy and it won't heat up your kitchen on warm days. Another way to use them, once you want to use your oven, take a 9 x 13 pan, pour 1/2 a can of enchilada sauce in the pan, then lay the frozen burritos in the sauce, cover with rest of sauce. Top with shredded cheese, cover the pan with foil. Bake in a 375° oven for 30 mins. Remove foil and bake 15 minutes more. Serve with a bagged green salad or a veggie tray. Have a great fall!

Perfect timing - life has been unusually chaotic lately, this is exactly the reinforcement that I needed. I spent this morning making stuff for the fridge. Funny enough, one of the things I made was tortellini and put it in serving size containers for later so everyone can eat when they are ready. The drive thru is just so crazy expensive I can't justify it. For sure staying ahead of the busy times makes life easier. Have a great ay everyone.

My favorite low stress meal is slowcooker shredded beef tacos! Cook a beef chuck on low 8 hours with a 15oz can tomato sauce and your choice of taco seasoning (I learned from others to add a dash ground cinnamon and ginger in for enhanced flavor). Shred and serve however you like it. If you want to then double the batch and freeze the extra meat for a busy day. I also make a big batch of Spanish rice and refried beans to keep in the freezer for enchiladas etc. I promise you these are the best tacos you will ever have in your life!!

Your freezer organization bag idea is a win at our house. We’ve been organizing our chest freezer like that for over a year and not only is it easy to find stuff it also helps me know what we are running low on, makes it much simpler to do a quick food inventory, which then makes it easy for me to make my monthly menu based on how full or empty a particular bag is.

At TJs our favorite quick meal is the 'bbq' teriyaki chicken - fully cooked - delicious - I either double the chicken by addin some cooked chicken on hand or sauteeing some raw chicken - or I only use half the sauce [two packets come in the bag] - it's still plenty of sauce and a little less sugar.

Also, it’s easy to know what’s permanent at Aldi and what’s a special buy. If it’s in the middle case (the one on the floor where you slide it open) that’s special buy. They’ll probably get it again. But maybe only quarterly. If it’s on the side and the doors you open, it’s generally something they always have. I realize not all Aldi’s are the same but they all have similar set ups and stock rotations.

I know what you mean about take out or eat in fast food prices. Crazy prices! I admit that we love Subway. Sometimes we give in and purchase 5 footlongs, a 6" sub for my mother-in-law, and 5 drinks. 70 some dollars was the total. Ouch! Our area Subways will not take the Subway Corporate coupons anymore. One excuse that I heard was told, "Corporate takes too long to pay the shop owner back.". I told my husband, "I think that I am about ready to make our own subs at home.". He agreed.

I think because of the oils already in the hashbrown, you cannot place them in the toaster oven, but the air fryer is great. They prepare rather quickly. My Walmart used to sell those and they were a favorite in my household. I may have to check my Trader Joe's. I haven't been able to find them anywhere since C10. I love them as a breakfast meal with an over easy egg placed right on top of it.

Mindy, I am a big fan of the beef and sausage lasagna two-tray pack from Costco. Microwave ready from frozen in 24 minutes. They also make a beef only version which is also good but the beef and sausage has some kick to it; unusually flavorful for a frozen entree! Very tasty! It's about $18 for the two trays. With a salad or vegetable and garlic bread, one tray would serve 4-6; the trays are about 11" x 7". Hope your kids have a great school year!

I have always been an avid cooker (from scratch) however in grief right now and I just want to add besides being busy, sometimes you’re just in a low place emotionally and I’m working on mindfully buying premade stuff to take some of the burden off. Importance is that I eat something, and buying some premade items to eat a couple times a week is as you said, way cheaper than eating out! (Side note - for anyone with an aldi, they have these decent freezer chicken/pork bowls that have good ingredients and are like $3.19 a bowl)
