Hi Arlene, I am working on getting weight measurements up on the blog eventually. For this recipe, I used US standard measuring cups, where 1 cup = 8oz (~240 ml). Also 1 cup = 16 tablespoons. Hope this helps.

Dearest Viola: This mango cheesecake recipe/video is the very FIRST video of yours that I've watched, and I wanted to write and HIGHLY PRAISE & COMPLIMENT YOU on the production and quality (as well as your recipe itself!). As I'm sure you know, the trend with these types of recipe videos has been for them to be extremely short, most UNDER 1 minute long. I have been HIGHLY ANNOYED at that trend, because, as far as I am concerned, as a SERIOUS cook, those kinds of short videos are not only annoying, but they are a COMPLETE waste of time. Your wonderful video here is an example of how I believe ALL recipe videos SHOULD be produced. The time you take with each step of the recipe, to be able to actually FOLLOW your procedures, AND to actually have time to READ the printed parts of the video, those added instructions (in addition to the visual) is nothing short of WONDERFUL. Those ridiculously SHORT videos are virtually impossible to follow and don't give enough information, even if you COULD follow it as all the visual steps and printed instructions zip by at LIGHTNING SPEED. Yes, they all usually include a printable, detailed recipe as well, but the VISUAL demonstration of there recipes is, I feel, even MORE important than the printable recipe, because it's like standing with you in your kitchen and following you as you prepare and execute each recipe. For those reasons, and even more (but this comment is already WAAAY too long---SORRY!---so I'll resist expounding even more on your expertise. Anyway, you're not only, obviously, a brilliant cook, but your production is SPECTACULAR, and I hope you will ALWAYS produce your videos with the kind of TIME and CARE with which you produced this one. It was absolute HEAVEN to watch this video, and I look forward EAGERLY to watching many more! I have subscribed to your KZbin channel and clicked the bell to receive ALL your notifications of new videos. And I will also subscribe to your website! Thank you! You might be able to use Pectin or carrageenan in place of them but I haven't tried this out so I'm not sure if it will work. Gelatin/agar agar is usually available on Amazon.

I must try this...I have never made a cheesecake in my life. I checked out the whole video and looked at all that is needed in your line up I got everything except the cake collar. They come in different sizes😗 which size should I get?

Heavy cream can we use amul fressh cream or tropolite whipping cream

I haven't used these brands but any whipping cream with at least 40% fat content can be used in this recipe. Creams with lesser fat will not whip well.

Can you please tell me how you've melted the agar agar powder. I've bloomed 7gAgar : 50ml water for 10 mins and then tried melting the mixture in a double boiler low flame, it just turned hard, I again tried a fresh batch in the microwave this too failed, no matter what variation I try, I've tried all brands such as Purix , Meron almost everything, they always become hard and don't melt. What am I doing wrong ?

I think you might be using too little water for that much agar agar. I used 1/2 cup (120ml) water in the recipe to melt the agar agar and I’ve never had an issue. If you can consume gelatin, that might be a good option to try out because it is a lot less finicky than agar agar.

Agar agar needs to be boiled properly and then poured while still hot. It definitely needs longer than 10 minutes to set. I have more details on my blog post.

Can you clarify how much water to use with the 2.5 tsp. Agar agar? I tried to boil it using 1/2 cup per the recipe but it still came out thick. It didn’t mix well with the filling I made. It was also hard to find the Alphonso mango locally so I made my own pulp. I also used agar agar for the topping but used a different water ratio after realizing my error with the filling. The cake started sagging but it was delicious! The cake was gone in less than a day! It was rough around the edges because I used parchment paper since I didn’t have the cake collar but will definitely purchase a roll. I plan to make it again so the correct water measurement would be great if you can post it. Thank you!

@@dionaloresnolanhernandez4061 Thanks for trying out my recipe! I'm glad to know it tasted delicious. Agar agar is definitely a lot trickier to work with when compared to gelatin. I would still recommend using the same 1/2 cup of water but to make it easier to mix I'd recommend 2 things: 1. Use both the mango pulp and the water mixed together to dissolve and heat the agar agar. 2. After this mix has come up to a boil, add it to the cheesecake filling with your mixer running and while it is still hot and pourable. This should help it mix evenly. Letting it cool down will thicken it further making it harder to mix which is not the case with gelatin. Hope this helps! I usually include more tips on my website. The measurements seem a little off, 200g of crackers crushed in a 9 in pan results in a 20% of the volume of the pan. Do I have some of the numbers wrong?

Here's my blog post with more details on this recipe: limethyme.com/the-ultimate-no-bake-mango-cheesecake/ The volume of the pan would depend on its height as well. Maybe your pan is shorter than mine? You will also need to make sure that the cookie crumbs are pressed down very firmly into the pan, otherwise the crust can fall apart.
