The reason you need to take a shuttle bus to another boarding gate and then walk up the stairs to board is because the aircraft you are taking just completed a domestic flight and stopped at the domestic boarding gate. Those wide-bodied aircraft are not only used for international flights but are also frequently used in domestic flights. So you were actually boarding in the domestic boarding area. Therefore, you couldn't use the jet bridge for direct boarding; instead, you had to use stairs to board.

You mean the Health Declaration Form? As to my knowledge, China actually dropped that requirement from November 1st so it's not needed anymore.

Not on the 737. But they also fly rotations on widebodies like the 787 on that route which have IFE.
