The little figurines he talks about are commonly referred to as knick knacks, the cow (patty because of hamburger patty) is in a rice paddy, men from Ireland are also known as Paddies, whack is a common term for killing someone, and finally, "knick knack paddy whack" is a common phrase from the olden days.
