Marion, every time you sample a meal you've made, you make me think of Graham Kerr, one of the first television chefs known as The Galloping Gourmet. To my great surprise, the gentleman emailed me back and I was so humbled by his kindness and his generosity of time.

I cut my culinary teeth on The Galloping Gourmet and I agree he was a pioneer in his day. He had personality galore and was totally watchable, but he never made anything as glorious as the dishes Marion cranks out on a regular basis. Rock on, Marion!!!

I made this recipe and it is AMAAAAZING!! Especially the rice, the fatty bits of chicken really brings so much flavor into the rice 😛😛😛 I can't find daikon radish where I am so instead I used thinly sliced purple cabbage, onion and shredded carrots for the pickled vegetables, just as amazing! For the chicken the first time I used a whole chicken, but found the chicken meat to be too dry, so now I use only drum sticks and I cut off the sking to make the chicken fat, just as delicious and the meat is more tender!

Hello Mam! The first thing, I want to tell you: I appreciate the clip you teaching people to cook Cơm gà Hội An. Thank you so much for this one. The second thing, it's we don't eat pickled carrots, we eat shredded papaya and sliced onion. For the third one, the chicken we will shred and mix with Vietnamese coriander ( rau ram), a little salt, and pepper. We have a sauce made from Chicken heart, stomach chicken, and chicken liver cooked together and the rice has yellow because we added turmeric when we cook. I knew this because my dad was born here and grew up here. Thank you so much. 👍🏻

Annie, that’s correct. This is just Saigon style chicken and rice. Definitely not the Hoi An style because there is no “NƯỚC MẠ” It’s eaten with that sauce and Hoi An style chili jam NOT fish sauce. This is a nice chicken rice recipe but it’s not Hoi An style chicken and rice!

I had Da Nang style chiili sauce made with pureed tomato and red chilli with salt added, sugar added later and some oil at the end. Has anyone got the recipe pleaee. It’s like a Jam rather than a runny sauce. It’s simmered in a saucepan. TIA

Marion, great recipe but there are a few things we do differently in cơm gà Hội An. The chicken is almost always shredded; the sauce is much thicker than a regular dipping sauce. Also, we have something called “nước mạ” which is a thick sauce made with chicken giblets, granted that it’s not for everyone. Hope you get to try the traditional recipe at some point.

I like to use this sauce for my boiled chicken and rice: minced ginger with scallion, oil and salt. It's very simple and good since we use it in a lot for White Cut Chicken dish in China.

1. Bun cha (famously eaten by Bourdain and Obama) - best eaten in Hanoi or northern Vietnam 2. Com tam (grilled pork and broken rice dish) - make sure to get the one that comes with fried egg, egg load/casserole, pork skin, pickled veggies, etc., and douse it all in the flavored fish sauce (nuoc cham). This can be found best in southern Vietnam. 3. Banh mi - a million iterations…and no, they all don’t come with pate! 4. Nem or cha gio (fried spring rolls), eat it with all the herbs, rice vermicelli, and dipped in flavored fish sauce 5. Bun bo Hue (pho’s spicier cousin) 6. Bun rieu 7. Banh cuon 8. Banh xeo - eat it with all the herbs/veggies and dipped. Best eaten in the central regions or south. 9. Cao Lau - best eaten in the central region or Hoi An 10. Hu tieu 11. Bot chien 12. Bo kho 13. Bo ne (steak and eggs equivalent) 14. Bun thit nuong (all iterations, best with the grilled lemongrass pork, but all grilled pork or even chicken versions are super good), douse everything in flavored fish sauce and mix well before eating 15. Bot chien (watch Max’s video on this) 16. Ca ri ga (chicken curry, the kind where you use the baguette to dip) 17. Anything that’s grilled and wrapped in herbs and dipped 18. Anything with lemongrass in it or skewered with lemongrass (like the flavored ground shrimp or ground pork that’s grilled) 19. Go to Vietnam for this, but try the snail restaurants that serve snails, oysters, clams, etc. Snails in coconut sauce, oysters/clams with scallion oil and peanuts, etc. AMAZING!!! 20. Many, many, MANY more…just ask around and don’t be shy about asking the locals or shop owners how to eat it properly.

Wish u can do Burmese version of Chicken rice, but i dont think u can get "Shan" rice outside of burma or maybe thailand so i think jasmine rice would be a great substitute for that ❤️

Marion, I need help. I never used to rinse my rice and started watching chefs on KZbin who said I had to rinse my rice. When you made this recipe, the rice wasn’t rinsed. Help. Rinse or not to rinse. That is the rice question.

In Vietnam, we always rinse rice.After that, we let it dry naturally in 10-30 miniutes

Always rinse your rice to reduce the starch. Usually you rinse it until the water runs clear. Starch causes your rice to be soggy and sticky. You don't want to be eating too much starch either. Also, vietnamese always fluff up the rice with a fork after the water has been evaporated. Replace the lid and let it sit there 15-30 minutes with the fire off like resting your steak before eating.

It is similar.The difference is Hainanese chicken rice uses soy sauce to maninate the chicken and add it when cooking rice - Vietnamese use tumeric powder and salt so the result is yellow
