You should finish the job. Leaving insulation showing defeats the purpose of doing a neat wooden floor. You start something, you should finish it. Maybe with either aluminium checker plate or the same finish as the inner door panels and sleeper walls. Checker plate around the pedal area and the other option in the middle with matching checker plate on the passenger side footwell.
