Making a bison burger is a bad idea to begin with. Bison is an extremely lean meat , so you want it medium-rare at most. Well done bison is basically shoe leather. burgers have to be well done for safety reasons.

Working from the outside in: Bun: Why is it not toasted? Toppings: Okay a little unique and to a small degree can understand. I myself have a recipe for a burger that calls for a slice of a pear. which is usually a hit at family/social gatherings. But why did he not melt the cheese? Where did he learn to cut a tomato? Why not use fresh peppers? Why use Teriyaki sauce and not a smokey or sweet bbq sauce? Personally I would have used a spread mixture of mayo, whole grain mustard, and fresh chopped tarragon. Meat: WHY ARE YOU MAKING IT A FLAT MEATBALL? WHY IS IT SO UNDERCOOKED YOU CAN STILL SEE THE SINEW? WHY DID HE MAN HANDLE THE PATTY SO MUCH?

1. The sauce is his own brand he was pushing called "The best (insert food type) you'll ever taste, so he's forcing his own sponsor on a sponsored video (BTW the brand now only sells aprons as the food fell out) 2. He regularly undercooks food as he has no patience nor understanding of food safety 3. Sport peppers were probably gonna go bad so he just threw whatever he had or it's his weird obsession with "sweet heat" (thus why teriyaki sauce) 4. Probably learned from his own video as he has his own tutorial video last I checked from 18 years ago 5. He really thought 5 minutes would have been enough for the patty to collect heat in the patty to melt the cheese, but with a temp practically at room temp, that cheese will only sweat, not melt 6. He man handled it to "incorporate the flavor" and hide the breadcrumbs and egg 7. He was notorious for never toasting buns ever

I hate to defend Jack, but the egg and breadcrumb combo is excellent for when you want to stretch meat to last you longer. You don't notice them in the finished product and the breadcrumbs will soak up juice and fat that would otherwise cause a grease fire on your grill. Poverty breeds innovation (-: But of course the "cooking" went to shit.

He's making a "Hamburg Steak", the predecessor of the "Hamburger" Look it up, there is a Wikipedia page on it and it looks quite like what he cooked. From Wikipedia: "This kind of fillet was beef ground by hand, lightly salted, often smoked, and usually served raw in a dish along with onions and bread crumbs" " Seasoning, egg, breadcrumb, onion and milk may be combined with the meat [...]"

The reason you can eat steak mostly raw is because the bacteria forms on the outside of the cut but has a hard time getting into the meat. But with burgers your literally grinding the meat up and spreading bacteria all over the place so you have to cook it thoroughly.

Eating ground beef not cooked to temperature is more dangerous than other forms of beef, though. Salmonella isn’t as much of a risk, but other harmful bacteria is*. I’d say the chances of getting sick probably aren’t that crazy outside of an outbreak (tends to happen a few times a year). *(The other comment is a little right, the actual reason why it’s unsafe is because ground any meat is just a random assortment of “leftover” cuts that have lost freshness for varying lengths of time. Less care/sanitation is also placed in grinding as it’s expected for people to… Not eat it raw. Fresh ground beef is pretty safe to eat raw, like legitimate you grinding fresh cuts yourself or a similar level of freshness.) -- Other than that, similar sentiment. I’d have a deathwish to want to eat any of Jack’s cooking, don’t get me wrong. But I’ve found a lot of commentators/commenters get a lot of things wrong when it comes to critiquing him and certain techniques (ex. the egg binder, which honestly is perfectly fine done correctly) or just… Plain over exaggerating. You don’t need to try and use technical terms or spout ignorance to describe this dude’s horrendous cooking lol. A simple, “Wow, this shit is rancid, and I have no other words to describe how my guts feel right now.” Would suffice.

STEAKS and cut fillets of beef are SAFER but not risk free since the bacteria grows on the outer edges and dont penetrate unless the cuts are mishandled . but any kinda of ground meat under cooked (or in jacks case still mooing) carries a high chance of food born illness. get your facts straight since food myths can actually kill people when it comes to handling raw product.

@@HeronCoyote1234 When you digest raw ground meat then it is not surprising. Ground meat raw is so dangerous because intestine can get ground in there and that is where all the horrible bacteria is. I have never and will never get a hamburger medium rare I don't want pink in my ground beef. Steak on the other hand are cuts that have none of the intestines in it so unless the meat is contaminated then you can eat rare steak. Nothing better in the world then a good medium rare steak

The exception is when you specify the butcher that you will use the meat for a tartar, which is raw grounded beef, but anything bought from the supermarket should be cooked well done. You cannot use grounded beef from the supermarket to make a tartar because when you buy it from a butcher, he will ground the meat from very fresh beef and he will take care of any cross contamination that can happen, which they don't do to such extent in a supermarket because they know people usually cook grounded beef well done. Sorry for the long answer, my grandfather was a butcher for all his life, and that's what he told me many years ago. Edit: I also agree with you that there's nothing better in the world than a rare, thick steak. Now I know what will eat tonight lol.

The mistake most people make with Cooking with Jack is assuming it's actually about cooking. It's not. It's about a sad man who can't cook who may drop dead on camera at any moment...if you just keep watching to the end you might see it. So he doesn't need to improve his cooking. In fact, it would hurt him. He knows his wheelhouse; terrible cooking sh*tshow no one can look away from and people enjoy reacting with horror to.

Actually eggs mixed with burger meat isn't a bad idea, it gives the meat some consistency and not to mention it gives the burger a little extra protein, I've done it myself many times and it works out really well, I recommend it. But yea, I never use bread crumbs.

It wasn't even rare. It was "blue rare" as August pointed out. I'm not sure the exact reason why steak turns blue when you undercook it a certain way, but that's where the nickname comes from. Daniel Day Lewis in Gangs of New York shows us the quintessential blue rare steak.

Not only can't he cook a a burger to the right temperature, he doesn't even understand the basic concept of "having some oil in the pan as you cook your burger." That pan is completely and utterly dry, no oil, no butter, no nothing. My burgers are basically swimming in butter whenever I fry them in a pan.

It depends when you press the meat. If you press the meat down constantly it'll dry out. If you smash it down in the beginning it'll be fine. I hate smash burgers though.

He's making a "Hamburg Steak", the predecessor of the "Hamburger" Look it up, there is a Wikipedia page on it and it looks quite like what he cooked. From Wikipedia: "This kind of fillet was beef ground by hand, lightly salted, often smoked, and usually served raw in a dish along with onions and bread crumbs" " Seasoning, egg, breadcrumb, onion and milk may be combined with the meat [...]"

@@thecolorfulgecko2200 No, I just live in a country where raw meat is perfectly normal to eat and where raw beef mixed with raw egg on a bun is served at university cafeterias because it's the most normal dish to eat. It just makes me mad that ignorant Americans think it's poisonous while they drink the third energy-drink of the night. The US has a lower life expectancy than all the other countries in which you could serve a raw burger in a restaurant (France, Germany, Japan, Korea, Israel, ...)

@@Ecstasia1 No, see it's more that our terrible environmental efforts and animal treatment makes it exceedingly dangerous to ingest our meats without proper cooking. You can't eat raw American meat unless it's from a reputable source. Especially the fish, so our cheap sushi 🍣 is expensive and only allowed by licensed companies who get safe farmed fish.

When I went to a Culinary Arts school we were taught to never crack an egg over the food you're going to mix it with. You're supposed to put it in a separate container first (just to make sure you don't put a bad egg on your food, making it all ruined)

I've never seen a bad egg...how common was this for you? I'm surprised anyone would expect their eggs to be bad and plenty of chefs will drops eggs directly into a pan of other ingredients, normally only going to a bowl first to whisk if needed.

@@Kefka2010 Not common at all. It's just a safety precaution for eggs just in case you do have that off chance of the egg being bad then you're not ruining the entire preparation. I, personally, haven't experienced it, and I'm happy that I didn't.

​@@Kefka2010a couple of months ago i was preparing the ingredients to make breaded eggplant. Go to crack an egg in a plate and to my horror the thing that comes out of that shell is a straight up demonic looking pitch black mass for a yolk with a watery grey "white" and tiny yellow chunks floating around in it. And oh the smell, jesus christ it was the first bad egg i've ever gotten and i could only think about how glad i was i wasnt mixing it with anything that would've been wasted. I remember one time when i was a little kid, my mom was gonna bake a cake and when she put the last egg directly into the flour bowl, there was the smell- rotten egg. The whole thing had to be thrown into the trash. Sorry for the long comment and bad english, but i was reminded of both situations and wanted to confirm, better safe than sorry, crack your eggs in a separate bowl, better not risk the recipe you're making

Mixing egg with mince, breadcrumbs and teriyaki sauce is not conducive to making a rare burger. With his though, you can literally see the fat hasn't rendered out of the meat, that's straight up raw. Anyway, it's his food I guess.

Raw beef is not problematic to eat. In France, Switzerland and Germany you can just buy a bun with raw beef on it in any bakery/cafeteria/butcher, even at the supermarket. It's delicious. In Germany every second construction worker eats raw pork meat on a bun for lunch (it's called 'Mett' or 'Mettbrötchen', look it up!) Y'all acting like baby boomers who first discovered that sushi is *raw fish* (gasp!).

@@Ecstasia1 yes and no. Unless you know the source ground beef shouldn't be cooked raw. At least in America. Regular beef is fine but because ecoli is on the outside of the beef grounding it. But yes Gordon has shown on his shows burgers with pink in the middle. It's just better that way...
