I smoked 2 cream cheese bricks, this morning on my Kamado pellet Joe. I used everthing but the bagel, and and a sweet bbq rub. They are delicious.

I first smoked cream cheese back in the mid 1980s in a home made, water smoker, made from a galvanized trash can (the idea for the smoker came from an episode of the Frugal Gourmet). After our success the first time using the smoker for a rack of ribs, we searched for anything we could try smoking and found a block of Philly cream cheese in the fridge and tossed it in. It was an instant success and ever since, we smoke cream cheese almost every time we fire up our smoker. We long since graduated from the trashcan smoker, but we still do smoked cream cheese regularly, 40 years later. If you haven't tried smoking cream cheese, you owe it to yourself to try it.

Fun Fact: I tried both the savory and the sweet rubs on almonds! I used 1 tsp of neutral oil (peanut or avocado) per cup of (raw) almonds and 2 Tbsp of rub per cup of almonds. Smoked them for 30-45 minutes at 275*-300* in the kamado with apple wood. Came out amazing!

Freeze it for about 1/2 hr for a firmer cheese to work with, and more smoke

I don't generally put anything in the cast iron before I cook this, I just put the pan on a heat resistant trivet and use the pan for serving.

Believe it or not, we get ours at Jungle Jim’s whenever we visit family in Cincinnati or buy online. Haven’t found a local source here in Indianapolis yet.

I don’t put anything on the bottom of the cast iron, just put the rub on the cheese, drop it in a room temperature cast iron pan and slide it on the grill.

You can certainly do this in the oven as well, but it won't have the smokey flavor that you get with a smoker. If you have a Gas Grill outside, you can always pick up a pellet tube for some smoke and cook it on your gas grill. That would still give you the smoke flavor.
