I agree with the comment made on how they love how you explain why things should be done a certain way. It also helps me understand better instead of just saying to do it that way like a drill sergeant would. I also love how you have all of these different tools that you have tested out for us in advance so we’re not wasting money on, for example, expensive, but unnecessary costs on things like bread knives. Hi Ben! I'm so happy to see a new video from you. I have been wanting to try sandwich bread. I Love your techniques and methods! They make so much sense to me. I took a sourdough class recently and just left more confused than ever, and I thought... there has to be an easier way! And, after a search, I found you! I used your boule recipe and made an absolute perfect boule the very first time I have ever touched sourdough anything. Thank you so much! I do have a question, though. In your boule recipe, you said you could make a loaf with that recipe by inverting another loaf pan for a cover. Do you have to cover the loaf pan in the same method here if using a regular loaf pan? I happen to have glass Pyrex ones, so I don't think I can do that method with those. P.S. it now drives me crazy to see videos of people slaving over sourdough. Who has time for that?

There's no need to create a closed baking environment for this loaf. We're not after an "old-world" crispy crust for sandwich bread, and that closed environment is what creates that great crust. You don't have to do it with the boule recipe, either, if you're baking in a loaf pan, it's just a crust improving technique!

I have tried your bread recipes here lately and I have found that they are far more Superior than the bread I've been making in the past. I absolutely love my 2 lb Pullman loaf pan but I've often wished I had a smaller one and I'm glad you mentioned that in your video so I went ahead immediately and pulled the trigger and purchased one this will be the perfect size loaf of bread from my son and I as we are both living alone in our home. Salted butter contains 4.5-6 grams of salt per pound. Which means that three tablespoons of butter would add 0.42-0.56g or 0.015-0.02oz of salt. The recipe calls for 14g of salt. A half a gram of salt will not make a noticeable difference in your bread one way or the other.

I found your sourdough videos early in the COVID years, and have watched them multiple times, taken notes, and tweaked things. I just pulled a starter out of the refrigerator after 6 months or so of not feeding it and it was still good! Thank you for all you do for the bread baking community. I mill my own flour to get whole grain nutrition, and really appreciated the lesson on how to incorporate whole wheat and why it doesn’t rise as well. Your prior video on making sourdough has been the ONLY place I’ve found that explains whole wheat fully, even after many years of searching. Please keep explaining how to incorporate whole wheat in your videos for those of us trying to stay away from 100% white flour…even if it means not as high of a rise.

Today I am eating a sandwich from my first real loaf of sourdough bread (thanks to you, Ben!) along with a side of crow. After moaning and complaining for over a month of coddling a starter that wouldn’t rise, the angels sang yesterday: fully doubled starter! And there was your KZbin for Simple Sourdough Sandwich Bread to boot, so I whipped out my King Arthur bread flour, etc. and got to work. It took MY bread about 20 hours to double, which was perfect timing for making bread at 8 a.m. this morning. Ben, it was very nice of you to respond so quickly! I'm not sure exactly how long it takes my dough to double because I'm sleeping while it rises. It's been almost 6 hours on this latest loaf, and it looks like it has already doubled. I'll let you know how it turns out. I did mean my starter doubles in about 7 hours, but somehow I missed to only wait a few hours and it is bubbly before putting in fridge, so I'll know next time I feed it to refrigerate sooner. You are awesome! Thank you.

Sounds like you have a robust starter, and you're ending up overproofing. Shorten the second rise to 1 hour and see if that helps.

This bread is PHENOMENAL! I used to make loaves with your other simple bread recipe, and they were good. This recipe is so amazing though! Made a batch of this dough last night, and its now half way thru the bake time. Thanx for all the great videos, very helpful to a beginner. Ahd the cinnamon rollsare excellent. I emptied the jar that i set aside for the cinnamon rolls and just for gigglesI swooshed 27g of water and 27 APF in again my starter came back from nearly nothing. So i bulked it up twice, now at 354g, Amazing, lol

As usual Ben Starr delivers. I just made this. I used the extra long pan and thought that I would need to make additional dough, so I made the recipe at 1.5. I didn't I got a great loaf and a smaller loaf that tasted incredible. It is so tasty, that sourdough flavor shines through. The bread actually raised for about 6 hours, and it was perfect! So light and fluffy and it only took 35 minutes to bake. thanks Ben.

Wow, I made two loaves of this bread yesterday. It took a lot longer to bulk ferment and proof than I thought ( but I did put less starter in as I didn't have quite enough), but they turned out amazing!! Great flavour and texture. Never going back 😊

Yep, I was overproofing, I guess. The 6 hour first rise, and 2 hour second rise worked great! It is at least an inch higher than the longer proofed loaf, and much lighter; not nearly as dense. Thanks to you, Ben, I now know I have been handling my starter incorrectly, and it was, indeed robust. I had no idea! Merry Christmas, and God Bless you for the joy you bring to others.

Yes! So...now it's time to migrate your starter to a life of sleepy luxury in the fridge. And as it becomes sleepier, your rise times will increase. EVERY sourdough recipe you use can be modified for Sleepy Sourdough. Just a longer fermentation time. And you'll be rewarded with better taste...as well as only having to feed your starter every few weeks or months.

Yes, I'd give it 4-6 hours at room temp, then refrigerate for up to 3 days until you're ready to shape. Pull from the fridge 2 hours before shaping, if possible.

@roxanav.b.4424 To the bowl I added the boiling water, butter, buttermilk and a beaten egg. Then to the mixture, I added the flour, salt and sugar. The sourdough was added last so it was on top. I then use the knead function on the bread machine 2 times (like 2stretch and folds). Once the dough has doubled I use the bake function of the bread machine and bake the dough for 1hr.

Thank you, Ben. This was my first attempt at making sour dough sandwich bread. The only question as a beginner, I have is how to keep the bottom of my bread from getting a little bit hard. Not terribly hard but not as soft as regular sandwich bread. I mixed everything yesterday and came home too late to bake it so I did it this morning. I fond it to be more sour than I like but toasting it and putting raspberry jam on it was delicious.

The longer it rises, the more sour it will be. You can counteract the acidity by adding a half teaspoon of baking soda to the recipe. (And lower the salt content a bit, since baking soda reacts with acetic acid to produce a salt.) If the bottom of your loaf is very hard, try putting a baking sheet on the rack under the bread pan. If that still results in a hard bottom, lower the baking temp by 25 degrees on the next bake, as your oven's thermostat may be off. You can also wrap the bread in foil while it is still warm from the oven, which will soften the crust.

I tried making this today and I'm so pleased with the result! A great rise, lovely soft crumb, and amazing flavour. So surprised that plain (all purpose) flour will make such good bread. I used yogurt and milk as I didn't have buttermilk, but it worked fine. Thank you.

I’m making this bread today - I absolutely love your SD technique and can’t see myself going back to the stater jar on the counter anymore 😎. I use beeswax cloth as well … and if you’re so craftily inclined (I make candles too), you can rejuvenate your worn out cloths by sprinkling new wax bits, heating in the oven or ironing over grease proof paper … easy peasy… and cheaper than buying new. Can’t wait to try this bread - I even ordered an offset knife as you suggested 😊 Thanks!!!

Ben - thank you Sir for making sourdough accessible for those of us who don't have time for all the slapping, folding, feeding and discard that normally goes with baking sourdough. It really is a great life following your channel. Made this loaf this weekend and can't believe how soft it is! Any suggestions how to make it with Rye and the same type of texture? Would love a soft hearty Rye with caraway seeds. And I should mention that I have been giving out sourdough starter along with your Simple Sourdough recipe from your website. Although I call it Simple Sourdough for "busy" people. Thanks again and look forward to more videos and recipes. :D

There's no such thing as soft rye bread, unfortunately. You can sub 6oz of the AP flour for rye flour, and toss in some caraway seeds during initial mixing, and add 1/2oz of water to the recipe. Expect a firmer loaf without quite as good a rise...but more flavor.
