Just before the start of lockdown in France, my great Georgian friend Levan came to visit us at the chateau. Aside from being an incredible professional clarinetist, he's also the owner of a fabulous Georgian restaurant, 'Batoni Khinkali' in Amsterdam. I persuaded him to show us how to make delicious Georgian specialities - khinkali (my favourite dumplings) and aubergine and walnut wraps.

It literally brings back my memories. When I traveled across the Georgia 🇬🇪 oh the food 🥘 was literally everything. And then you have the old medieval 🏰churches and historical monuments everywhere. What a beautiful culture they are! Bravo 👏🏻

I am georgian and watching this video made me first of all hungry and second of all so proud and nostalgic. For those who are allergic to walnuts like me, I use chickpeas and make some sort of hummus to fill the aubergines with. Tastes also fantastic.

my father's relatives were immigrants from Czechoslovakia and my grandmother used to harvest wild mushrooms to make pidpenky dumplings , they look very similar to the mushroom ones , really interesting show thank you

Tip for peeling a pomegranate. Do it in big bowl of water, after cutting it in half. No mess at all and all the white bits float!

Another way is to cut the pomegranate in half and hold it face down while tapping the outer skin firmly with a wooden spoon. All the seeds loosen and fall out very quickly.

Thank you so much for this little taste from Caucasus. I know people from this area are so kind and their cuisine is so generous. I always remember my trip in Yerevan (Armenia). The people are so nice even they are really poor. Unfortunately on this area of the world there is so many problems. I remember of the grape leaves fill with meat and rice I eat in Yerevan. They call this dish Dolmas. It is absolutely delicious. The coffee on this part of the world is so tasty but it is really really extremely strong. Have you already drink some Oriental coffee ? The coffee is cocked inside the water and this mixing is served. Thanks for your adventures on your splendid château. I hope you will live many more happy adventures on your castle

I'm a mix, my parents are of different ethnicities, so are my grandparents on both sides, and their parents, so on and so on, going back generations. My parents have different first languages to each other and to me, so does my grandparents. I've been taught traditions and recipes that nobody knows the origin of, just that they have been in the family a long time. I've made a similar dish several times, but never knew where it originated from. About the traditions, I've been taught that many things are offensive in different cultures. The problem is, nobody knows in which. So I know not to do many things, just not where they would be offensive.

another horrible trait of the 21st century, people are always 'offended' its inhuman and is causing people to simply stop communicating with others least they OFFEND. people need to get over themselves and lighten up, live and let live

@@Motherhubbard170 I think you need to lighten up. There is nothing wrong with cultural differences. Some gestures are similar to each other, but with a slight difference they turn offensive. Like asking someone to come to you with your hand palm up versus palm down (most of Asia), or showing the peace sign changes meaning when it's palm towards yourself (UK and most of Europe). In Bulgaria nodding and shaking your head has the opposite meanings. I've stumbled, said and done things that can be construed as rude, but I don't run away from it, I explain myself. Either why did I what I did, or why I was shocked by someones actions, and that has lead to interesting conversations and funny situations. If I accidentally offend someone, I apologize and explain myself instead of demand people to let go of their culture and traditions.

He said the name possibly came from the Mongolian empire - so they may have a similar origin.

They originated from Africa....not China or the Far East..... they then 'migrated' to North Africa, (in particular, the Arab speaking Countries), and were adopted by many Countries including Georgia, Albania & the former East European block.....but also Spain.....[OK, maybe I need another hobby in my life ☺]

It's always interesting to see something new, the filling sounds delicious but I've never been a fan of dumplings, I think it's the texture. My mother was a great cook but dumplings....mmm no, sorry Mum! Thank you Levan, look forward to next week. Seems like Cat really enjoys cooking... 💗🦘

Hmm I think Marie was feeling a bit pre-empted and the chemistry is (although subdued) between Stephanie and the Chef. Kat was doing an excellent job facilitating, filming and participating/learning. I am thoroughly inspired even though I don’t care for Aubergine, or too much dough. It’s got to be the right dough, and the mix of spices makes a huge difference as to enjoyment and healthy digestion, hence immunity. Anyway sooooo grateful for this quality content!!!

Hi Stephanie..... not certain if you read these but I'm sure someone will be interested to know that the "Sauce", Levan was talking about.... (if I heard him correctly), is called Tkemali..... it is made from cherry plums...... so a Cherry Plum sauce...... the 'dumplings' are quite typical in most of the former East European Countries but are definitely delicious....... fattening, but delicious ☺

Wonderful! I would love to make the walnut paste. Hopefully he will be able share the amounts in his recipe. ( The link gives helpful advice to making aubergine, but does not offer ingredients. ). Other recipes online are similar, but I would love to make the recipe on the video. Loved the video.

I'm sure those Georgian dumplings travelled from China at some point in history. They are referred to as soup dumplings, and usually made with pork or shrimp. Delicious ...

@@AslansAngel1 Yes Xiao Long Bao - served with a sauce of black vinegar and thin slices of ginger, poured into the dumpling after making a hole in the wrapper before eating. Amazing taste

I just know they fought off the Russians a couple of years ago.We,England ,share the same flag St George.Also Katie Melua is from there.

In Russia the best restaurants are from Georgian cuisine! Estaline was Georgian. They have a very ancient History and culture.

Thank you, Stephanie, I’ve just made this paste and cooked shrimp in this sauce, and it was delicious. I’ll post on my IG acct and tag you. I don’t have a recipe, just put all the ingredients in as a guesstimate, and it worked👍

I watched this video a few weeks ago and tonight my two daughters ( 7 and 5 years old) helped me make Khinkali. It was a hit with the whole family! Thank you for introducing a new cuisine to us! Now to work on perfecting the dough...
