i usually don’t comment on videos but i made samosas using this recipe (i opted for curry powder instead of garam masala as i didn’t have any) and they tasted so good. if you’re looking to make them from scratch follow this recipe, did not disappoint. 10/10

Tried this recipe and my whole family can't stop eating them... No joke😃❤️🌈. Also I found the filling in this recipe was enough for dough made of a total of 3 cups of flour. The filling took me more time to make than the dough. Also, if you want to eat fresh samasos or you don't have time, put the filling inside the samasos, then keep them all in a freezer bag inside the refrigerator for upto 2 days I'd say. Fry them when you want to eat them fresh. Good luck :) And thank you so much for this recipe. (p.s. I'm only 20 yrs old so if you're younger or older, you can definitely do it. I believe in you.)

best samosa recipe i have tried. Dough is perfect... Russian wife said it was the best dough she has ever had for a pierogi, flaky, buttery. Filling was perfect, delicious perfect spiciness. Best of all it was easy for a beginner. Also the video lesson was top notch and high quality. I love this format for cooking recipes.

Everything ALWAYS tastes/works better in fat vs oil. Fat is so expensive to buy however. I've begun rendering my own, but it's a slow process to acquire a decent amount of reasonably neutral flavor fat. (I mention the neutral flavour because Lamb is common in my country, and a possible prolific provider of fat but it implants lamb flavour heavily.)

Thanks! As a white guy who lived in Pune for work for a few years sometimes i really miss the street food. Best and spiciest samosa i ever had was from old lady at the Rajkot airport in Gujarot. She asked if i wanted the spicy version or the normal... i asked for spicy, she warned me again LOL but i ate 3 of them and got mad street credit from her.

I've made this exact samosa recipe twice, and my family loves them💯. As for me? I can't get enough off them with green chutney and red chutney 🤤. I made them again tonight for the 3rd time (without frying) and put them in the freezer. That way, I'll have more to snack on in the future. I'm Hispanic and LOVE Indian food 🥹🤤❤. Btw I get about 18 samosas with these measurements. I always end up having about half a cup left of potato filling leftover. Absolutely no food goes to waste in my home, so I save the leftover aloo/potato filling and make it into sandwiches the next day. To the sandwich, I put mayo & green chutney on each slice of bread, then put the aloo filling plus a few cubes of paneer cheese (I sometimes add thin fresh tomato & thin cucumber slices), close the sandwich, toast it in a hot pan, and it's ready to eat, perfection! 🇮🇳🥪✨️👌🏻😁

Yeah just double the fry time & use cooking spray half way through cooking time. I would try using a thinner dough so they would be crunchy.

Made these last night. They were fabulous. I made the filling and pastry the day before, kept them in the fridge overnight, then made up the samosas yesterday. Ate some and froze the others for another time. Tasted very authentic. Thanks for sharing your recipe.

12-14 samosas Ingredients: For the dough: 2 cups (250g) Flour 1/4 cup (60ml) Oil or melted ghee 1/4 cup (60ml) Water 1/2 tsk the filling: 2 tsk Salt Oil 3 Potatoes, boiled (500g) 1 cup (150g) Green peas 2 tablespoons fresh or frozen Coriander leaves 1 Green chili finely chopped 8-10 Cashews, crushed (optional) 2-3 Garlic cloves crushed 1 tablespoon Ginger paste 1 teaspoon Coriander seeds crushed 1/2 teaspoon Garam masala 1 teaspoon Chili powder 1 teaspoon Cumin seeds 1 teaspoon Turmeric 1 tablespoon Lemon juice Salt to taste 1/4 cup (60ml) Water Directions: 1. Make the dough: in a large mixing bowl, mix flour and salt. Add the oil and then start mixing with your fingers, rub the flour with the oil until the oil is well incorporated. Once incorporated, the mixture resembles crumbs. 2. Start adding water, little by little and mix to form a stiff dough (the dough shouldn’t be soft). Cover the dough and let rest for 30 minutes. 3. Meanwhile make the filling: roughly chop/mash boiled potatoes, set aside. Heat oil in a large pan, add cumin seeds, coriander seeds, chili powder, turmeric and garam masala, cook for 30-60 seconds to release the flavours. Add crushed garlic, ginger paste, chopped green chili and cook for 1 minute. Add chopped onion and sauté for 3-4 minutes. Add chopped potatoes, green peas, lemon juice, water and salt, cook for 4-5 minutes, stirring frequently. Add crushed cashew and cook for 1 minute more. 4. Turn the heat off, add chopped coriander leaves, stir well and set aside to cool. 5. Shape the samosas: Once the dough has rested, give it a quick knead. Then divide the dough into 6-7 equal parts. Shape into balls. 6. Start working with one ball at the time, keep the remaining dough balls covered all the time. Roll out each ball into an oval, about 6-inches long and 4 inches wide. Then cut it into two parts. Coat the edges of each semicircle with water. Pick the two corners of the semicircle and bring them together, edges overlapping slightly, to form a cone. Press down on the seam to stick it. Fill the samosa with the potato filling, around 1-2 tablespoons. Don't overfill the samosa. Now, brush the edges again with water, then pinch the edges and seal the samosa. Repeat same process with the remaining dough and filling, keep filled samosa covered with a moist kitchen towel while working. 7. Fry the samosa: heat oil to 175C. Drop the samosas into hot oil, 4-5 pieces at the time. Reduce the heat to medium. Fry for 4-5 minutes, until golden and crisp. 8. Drain on paper towels before serving. Serve with your favorite sauce. Notes: • Traditionally samosa dough made with ajwain seeds (carom seeds), I couldn’t find it, so I skipped this step. I you want use ajwain seeds, add it the flour mixture when making the dough. • Don’t fry the samosas in too hot oil. Add the samosa to hot oil 175C, after 1 minutes, reduce the heat to medium-low. • If you want to bake the samosas: brush each samosa generally with oil. Bake in preheated175C for 30-40 minutes, until golden. • You can freeze the samosa after filling and shaping it.

Hi, cooking foodie, just to let you know that I tried making samosa this evening and I baked in the oven as per your instruction. I made another dough as there are still so much fillings left.. Half of it I baked and keep in the fridge after they cooled down for tomorrow breakfast. The other half I freeze it immediately after the filling and shaping. I have tried 1 piece and it was tasty and healthy as I baked it. Was wondering if you can teach me how to defrost the frozen samosa so that I may bake it or fry it the next time.. Add kalonji or kala jeera to the dough because it enhances the flavor, making the taste of samosas truly complete. Without kalonji, the dough lacks the depth and aroma that make samosas so special.😀 just an opinion 😊

If you skip onions samosas will stay good for a longer duration w8th onions samosa gets spoiled quickly. In india you will rarely find samosa with onion. Otherwise recpie is awesome thank you for trying it.
