What is the function of the ‘khar’? Is it just color or it also adds some smokiness to it. It was very interesting - never seen a banana peel used before, let alone dried and burnt- pretty cool technique!

Aditi Biswas 'khar' is a traditional ingredient that we use in our cuisine. I don't know how to exactly explain a 'khar' but it is a very healthy recipe since not a single drop of oil and haldi or any other spices are added. We use various vegetables to cook using 'khar'. And it has also health benefits you know. It is said that it cuts the fat that we gain by consuming all those spicy and greasy foods in our daily life and also cleanse your stomach curing digestive disorders🙂🙂

Nice! Thanks for explaining. I have been to Assam and tried several kinds of thali at many different places, I found them all very tasty. In retrospect I think I have had this dal somehwere and found it very different and very memorable and told my mom about it when I came home.

Aditi Biswas Oh that' great and glad you liked it. There is also an another way of preparing khar which is prepared with the dried stem of banana tree. The stem of banana tree(only bhimkol) is cut into slices and dry it under the sun then the fully dried stems are burnt into ashes and are collected. Then the collected ashes are filtered into water and stored into a bottle and can be used whenever needed. The flavour of 'khar' collected from banana stem is quite strong compared to banana peel and we tribal people mostly prefer the strong one that is made from banana stem🙂.

Hi, the metal is called "kaah", so the plate is called as kaah-or kahi and the bowl is called kaah-or bati....It is a kind of brass metal...These are usually available in shops where you get kitchen appliances...
