I thought the same thing about the SC Cinnamon syrup, I ended up using 8 sticks instead of three and let it sit for 24 hours after the simmer. Potent but I'm sure it what i should be. I'm loving this 4th resurgence of Tiki that seems to be happening post pandemic!

Better cinnamon syrup recipe is to toast the cinnamon at 300F for about ten minutes, then crush and mix into warm simple. Let it sit an hour and strain.

Tiki shows warm my heart. I've been into tiki since the early (2nd wave?) revival in the late 90's when the Book of Tiki came out. One part of the history I find fascinating is the intersection of punk rock and tiki. Someone needs to do a deep dive documentary on that.

@@SteveKryworukaEven more than Surf Rock, I think Rockabilly is the bridge between Tiki and Punk. The punks that veered their aesthetic more towards the motorcycles, denim, and leather look of the 40’s/50’s adopted the Rockabilly lifestyle and sound and morphed it into Psychobilly. Psychobilly was all about the campiness, so the whole Tiki vibe, with its palm trees, voodoo skulls, and totems fit right in to their aesthetic.

FYI, for flavored syrups such as cinnamon you can simmer the FLAVOR in just the water, filter THAT (which doesn't clog filters nearly as much), THEN add the sugar to the warm liquid. I.e., simmer the cinnamon in just the water (I tend to bring to a simmer, turn off heat and let rest a couple hours, then repeat a couple times), run through cheesecloth/coffee filters, THEN warm and add sugar. You can easily add a little water if there is too much evaporation.

Many of the classic drinks are great. Not denying that Smuggler’s Cove isn’t the best tiki bar, followed closely by Tiki Ti, the classics are where it is at. You just need to source the proper rums. Coruba was the dark Jamaican rum that most bars had access to back then and works best in most classics. Putting in Appleton 12 yields a vastly different drink. Sippin Safari is great history, as is potions of the Caribbean. Remixed is a good bible of drinks. Jet Pilot (aka. Balanced 34 zombie) Saturn, skin diver, lots of variety in the classics

Wow. I am impressed. I remember looking through Smuggler's Cove and I thought most of them used orgeat. Unfortunately, I have a nut allergy (I know there is this legend of a nut free orgeat using avocado pits, but I don't see it commercially available, and I don't eat that many avocados to make my own). Now I'm going to go back to the book to look for all the drinks that don't use it.

For the umbrella, I go by this; first you have the standard umbrella that goes in a lot of tiki drinks, second you over extend the umbrella for the tradewinds cocktail symbolizing the tradewinds, and third you over extend and break (crumble a bit in your hand) for the hurricane cocktail. Oh and by the way l love your videos.

My attempt at creating the Hawk Tuah! (sp?) Cocktail: Whiskey Sour with Laphroaig 10 and chartreuse instead of simple. Topped with an Irish cream foam. The concept here for me was to try and mimic what happens in the backseat after you and your classy date leave a shady, smokey bar at 3:00 a.m.

The only amaro that is similar to Angostura Amaro is Dale DeGroff’s new world Amaro. I’ve subbed it out (and used it head to head) in a couple recipes and it works well.

You can break it down and simplify it a bit: - 1x pot still mashed (IE a hamilton) - 1x ea of (white Rhum, overproof Rhum [white or dark], dark Rhum). IE a Barbancourt Haitian or similar carribean rhum. Start w/ white Barbancourt overproof - 1x ea of (white bacardi, bacardi gold, and 'reserve' rum like Mount G-ay Reserve, Bacardi 8). start w/ Bacardi Gold. - 1x spiced rum (IE good Captain Morgan's, or Kraken). - 1x Cochiti (IE S. America 'rum' from Peru/Bolivia etc). Everything after that is more nuanced and taste preference. Don't OVERSPEND on the bottles, its Tiki...fundamentally its meant to blend in a bunch of ingredients: its not 'Rum on Rocks'. Just focus on 'decent' bottles, and it'll go a long way.

Yes, re: Tiki's punk history. In the 90's lots of people moved from punk to rockabilly, which doesn't seem like a big leap, and from there went to swing, which makes sense, too, I guess, and then into other retro interests, like tiki. Strange how these things shake out. Or drink-mixer out.

Unpopular opinion: subbing rums is actually super easy. With the sole exception of un-aged cane juice rhums, every combination of every other rum on earth is a reasonable substitution. And if you sub for any combination of rums you know you like, then you will like any of the 13 bazillion combinations you might stumble across. Want to prove me wrong? Name 3 rums you like together in a drink, and 3 other rums you also like that make the same drink horrible. I double dog dare you.

Ok that’s completely incorrect and easy to disprove. A Zombie preferably uses a dark Jamaican (Appleton 12 Year), a gold Puerto Rican rum (Bacardi 8 Year), and a Demerara 151 rum (Hamilton 151). You sub that drink with three rums I love being Doctor Bird, Hamilton Jamaican Pot Still Black, and Wray & Nephew White Overproof and 100% it will not be good.

We don't get Bird in my market, so I reserved my bottles for sipping or I'd make your recipe immediately without hesitation.
