Shay in an very rural area of Nebraska we have a small batch vinegar maker George Paul Vinegar. Chefs from all over the United States want to buy his vinegar. He makes a traditional Balsamic aged vinegar going straight from juice to vinegar. I think he may be the only one in USA doing in this extreme old school way. Check him out it would be fun to hear how you think his product compare to the Italian ones.

Yummy, now Im craving this salad. One of my faves. My dad loved the italian ways. I love the family culture and that people dont live to work where people do here in America. There's a healthy balance there. Maybe in every country but ours. 🤔

I noticed your mozzarella is more of a pale yellow color, never seen that before. Is it because of the cows diet?

It’s fresh raw milk which can have a more yellow tint especially jersey milk. It has a lot of cream and fat that I don’t separate. And I think Stu put a little bit of a filter on this video that made things a bit more golden.
