I have been enjoying the videos immensley! I would love to hear a short podcast on your top list of books that have helped guide you and your family with preparing, using and cooking recipes for all the parts of a pig. Our family is very thrifty and we want to make sure we use every part of our pigs when it comes time to butcher them. Thank you so much for the information your family puts out.

@FarmsteadMeatsmith - A bit off topic here but your amusing roadside story reminded me about something I'd thought about previously.... I harvest (with help) pigs mostly. I've never been a huge organ meat fan, but (if you can believe it) my 11 year old son who I've been teaching how to make salumi insisted that we "should not waste the heart and liver" recently. I was humbled by my own son. I could not have been more proud. We fried up some heart and liver and they were a hit. We got to the lungs and suddenly I was overwhelmed with a feeling to stop. Being young in Italy I forget what we even did with the lungs... All I could think of was all North American the warnings, that lungs should never be consumed. I'm wondering what you as a norcino do with the lungs? I'm not aching to eat lungs... but I appreciate that there should be a good use for them if it's possible.

This is a topic I can appreciate and understand after a rooster we had. We have a rooster is fantastic, does a great job of watching the flock. You bought more chicks one of them turned out to be a rooster and as he grew up wreak havoc on the rest of our chickens because of the fighting for dominance in the way he treated the hands. That rooster no longer with us in our original rooster pack doing his job of watching the flock and the hens are all happy.
