I went to Xinjiang last year, Urumuqi and Kashigar. People there are just extremely friendly. I enjoyed the food there too. You make me jealous because you are in China now I am in Canada. People have asked me in the past, what is my favorite Chinese cuisine? Answer, Xinjiang Cuisine. It's the perfect blend of thousands of years of turkic/middle eastern/Chinese style cooking molded into one. That "rice pilaf" is out of this world, I've never had anything like it. That natural soft melt in your mouth lamb fat and meat, mixed with the sweetness of carrots which tastes and has more of a texture of pumpkin. That "kao baozi" bread is like a mix between a bagel, croissant, and pizza crust. Outside it's got that char and crisp, next layer is chewy, and last layer is puffy/foldy like a croissant (but not as light). This is just a small portion of many, of my favorites was a lamb meat pie that was seasoned with raisins. Really unique flavor, but that crust was amazing.

Fantastic. I cannot say how much I enjoyed this, the food looked spectacular. Interesting all the different things they incorporate pumpkin into. Everything looks so nutritional and has spices and texture but nothing you ate seemed tough. Oh my gosh, just amazing. The pilaf with the carrots totally reminded me of the afghani Kabli Pilau. It has a lamb shank and a mountain of rice with carrots and raisins. The name as well when he said Gwesh Is meat thats the same in Urdu. Everything has been so mouth watering. Best part for me is that all this is halal 😭❤️❤️❤️❤️

The kaobaozi is amazing. I mean how they toast the baozi. I used to eat toast batata, which is also in such kind of an oven toasted, and I can imagine the special flavour of the food from these ovens.

I come from Xinjiang, really miss hometown food. U can try specific Dapanji, without juice, cook base on chili oil, named Laziji. and best place for chicken food is ShaWan, a towns near the Wulumuqi.
