Do you mean dip them in the garlic adobo water before you refry? That's what I do.

@@bkmac10 I soak them in it for 10 minutes and then I fry them. I only let it fry till it’s a pale golden color. I take them out and then I squash them and dip them again in the salted water for about 1 or 2 minutes and then I finish frying them again.

I use the bottom of a 2-cup pyrex measuring cup to smash them. They slide right off. We also have a dipping sauce for them: Add a couple of tablespoons of oil to the Mojo marinade you buy at the store. Mix well. Yum.

My mother taught me to place the fried tostone between two pieces of brown paper bag and squash it with the heel of my hand. They didn't stick to the paper and were easy to get back in the pan.

In my humble opinion there is no need for soaking in salt water as that step is for making masa for pasteles and alcapurrias. I just peel cut and try remove smash fry until crispy then add salt and maybe some garlic. Save some time and the extra step. Looks yummy. Try it for lunch with topped picadillo.
