Ribs look so delicious Tommy. I have tried the peaches and scream sauce and it’s great. Ordered when you first used it. Which ribs are your favorite baby back ribs or the St. Louis spare ribs ? That Masterbuild is a nice looking grill with a lot of space between the grates. Really like that. My pellet grill doesn’t have much space in between so I mostly don’t use the top grate. Happy New Year! I go by feeling flex on the ribs. You want a good bend but you don't want them to rip. Usually around 200f

I've gotta do some ribs soon! My last handful I've been doing the party style ribs, cut them up, rub em down, get them good till wrap with sauce and open the wrap the last 30mins. Not as pretty as a full rack on the board but quick for serving and they have been killer ribs. I guess I should do a video on them one of these days, lol. As soon as I edit a video, I have many to do, I will be back and get my ass on a schedule. Cheers brother!

Nice ribs, that sauce looks interesting! You didn't spend a lot of video time on how you set up the XT for that cook. Was it straight charcoal, did you mix in some wood chunks? I know you are close to a year with that unit, things still working like you hoped? Thinking hard on making the switch to an XT, sometimes the FB groups get drowned out by people with issues or don't know what they are doing and the ones that are having zero issues just cruise right along and dont say a word. Appreciate all the effort you put into your videos. Chris

Happy New Year Tommy. I know that you like to chew the meat off of your bone (Oooops, that doesn't sound right) - I am the other way, I like my meat to fall off of my bone. The sound peaches and scream sounds good enough to try, I love heat, Mo Hotta, Mo Betta for me (Ghost is the coldest pepper that I use). I will look it up and give it a try. Great looking cook.
