We have a wonderful community of staff in the happy pear with a wealth of knowledge from so many parts of the world. This week we have Terrance in the studio. Terrance is from Goah and he's showing Steve how to make a traditional Biryani.

Oil Black pepper Sliced onion Cauliflower floret Carrots Ginger Garlic Green chilli Carroway seeds ? Potatoes ( already boiled ) Water Red chilli powder Turmeric Garam masala (more of this ) Coriander powder Dill Salt Coconut yogurt More water Mint leaves Saffron w/ hot water Layer rice and sauce together Layer with fried onions

This is my all time favourite student meal in Ireland. I make it in a pressure cooker and it takes under 20 minutes ... sooo good! Putting a layer of non dairy milk and rose water on top of the layers really brings the whole flavour together from top to bottom as well 😁

@that's right Yes, we add it in addition to the saffron water which gives colour and flavour. Rose water or kewra water(whichever is available) only add another note of flavour. You can find kewra water in indian/pakistani stores. Avoid if it's stretching your budget. But usually it doesn't cost much.

Looks amazing. You are suppose to cook the rice only 90%(let the 10% cook in the other pot) and use a fork to gently transfer into the other pot, as perfect looking pieces of rice are usually expected. And vegetables are known as Sabji. Bhaji means stir-fry or a vegetable dish.

The rice seemed overcooked it should be cooked 50-70% and then cook fully with all the veggies, otherwise it's a great recipe I love Indian foods I will definitely make this dish.

Ok, confession: I LOVE Indian accents and the food!! This is a treat for me just watching this! Added bonus, VEGAN Indian food. There are many Indian food recipes that are vegan but every new one is appreciated!

Indian food is the absolute best! I’d definitely recommend trying a biriani or a korma as a first taste, they’re not as hot but they give you a great idea of the cuisine.

I made it with what I had on hand today and it was fantastic! Following another recipe, I topped my biryani with fried onion, cashews, mullberries. Highly recommend it 😍

I liked the way he experimented with dill. Will try it as well. Also I would like to make a small observation, basmati rice absolutely must be long and fluffy and the grains shouldn't stick to each other. Very hard to get it right

This cook talks less but shows it in action. Kudos to bringing him in. However, the questions seemed a bit rude. "Oh wow, we're gonna cook them some more..." "Why do you do that?" "Oh big pieces of chilli..." - You don't need to fricking eat them. Use your eyes and don't eat them. He's showing you how it's made.

I LOVE white rice (it doesn't hurt to eat it at all-don't be afraid of good food in moderation!) and am gonna test out using my air fryer for the onion-the saffron I'll have to skip bc of the price but this looks INCRED!!!! Thank you!

U can make it really quick , put all the vegetables in one pot add all masalas with coconut curd let it marrinate for one hour or 30 min , put hot water on stove bring it boil add rice and bayleaf , mean time put a pot add oil put onion , ginger garlic paste and mint leaf roast them and then put marinated vegetables in the pot , by this time rice in other pot gets half cocked ( u can know it by pressing the grain and it breaks into half , drain the water put the rice on top of vegetables in another pot. Simmer the pot for 20-25 min done.

Just made this. Though i was missing half the ingredients and had to sub. Like cinnamon and guava jelly to get that sweet side. Came out fantastic! Thanks for the inspiration.

3 tbs oil 1 red onion 2 ts black pepper 1 cauliflower .5 carrots 2 green onions 1.5 thumb size pieces of ginger 2 cloves garlic 1 green chili a few caraway seeds 2 potatoes 1 L water pinch chili powder pinch tumeric 2 tbs garam masala 1 ts coriander 2 fennelgreek leaves or fresh dill dill a few cardamom pods generous ts salt 3 tbs coconut yogurt handful green peas few fresh mint leaves pinch of saffron serve over basmati rice, cooked with bay leaves and caraway seeds top with cilantro + fried onions

Why always white rice? I don't like it and it bothers my system. Can I use brown rice? I have long grain, short grain, jasmine. I use white for my dogs tummy aches. Just curious. Can't wait to try this. My son is vegan and I like to cook for him.

Vegetables are not "bhaji" in Hindi. Bhaji means something that's been deep fried. Vegetables in Hindi are "sabzi". Great job though - can't wait to make this!
