13:25 I have been making fritters and similar things for over 2 decades and I never knew that adding the second batch while you are taking out the first keeps the temperature even! I almost always end up burning my second batch and it would drive me nuts! Thank you so much for that tip!

I wanted to take this opportunity to say thank you, for the warning of when the recipe would resume for those of us who are not Christian. Normally if I saw someone mentioning “God” in the description of their channel, I would just cruise on by. I have respect for you, and your beliefs, but I don’ share them. For some reason, I decided to watch, and was touched that you would put that warning in your video so those of us that wanted to could get to the recipe and not feel hassled. @@TheHillbillyKitchen I cant wait to try the recipe, and frankly, I believe, but I don't mind telling you that I don't believe everything that you believe___all the time. It appears that everybody tends to freelance and add wayy too much opinion and then attempt to state one's beliefs as fact. That's why I don't consider it proper to push my beliefs on folks. The reality is that we have 'faith' that what we believe is true, but honestly no one will know until we leave this earth. I'm sure there are some, but I haven't met anyone who is actively attempting to die. With that being said, I noticed the wall hanging in your kitchen that stated, among other things: "We say Merry Christmas", "One Nation Under God", "Salute To Our Flag", and "Salute To Our Troops". You appear to have strong faith, and I have no reason to judge you as anything but moral based on my limited knowledge of you. So, what's the point of claiming "Merry Christmas" as a testament to faith? I say it, but it appears to me to be more of a greeting. I worked 20 years in the greeting card industry, and we had classic greeting cards that dated to the inception of the company (in the late 20's) that read "Happy Holidays", as well as "Merry Christmas". There were and are also cards that read "Yuletide Greetings". These cards give the issuer the ability to address the receiver in ways that encompass ALL the winter festivals. I'm perplexed as to why you see them as politically incorrect, or whatever. Same with "One Nation Under God". Almost EVERYBODY says it when reciting the Pledge of Allegiance. Why do you take a stance, when almost NOBODY rejects it? (Besides, Christ will be glorified whether or not someone says Merry Christmas). We even had a President that claimed he should receive credit, because he "put Merry Christmas back in Christmas". I mean, are we so misguided as to 1). believe that; and 2) that it matters? Lastly, ""Salute To Our Flag", and Troops" are laudable (in my view), but what does saying it or not saying it have to do with Political Correctness, or faith, or anything? What does "Saluting the Flag, or Troops have to do with Christ? I hope you don't find this response to be negative, but I've heard a lot of this on radio shows, and to me, it's much ado about nothing. I can't imagine allowing anybody or anything to get me riled up over something so bereft of substance. As you might imagine, I've been wanting to find a way to ask these questions for a long time, and I don't want it to seem like piling on. There appear to be others on this post, so they are free to comment, and debate. I'm not interested in putting anybody down, but I will accept being put down, if the poster would opine as to these points I brought up.

I've done several of your recipes, and thanks to you I was FINALLY able to make Buttermilk Biscuits and sausage gravy. Before it always came out like hockey pucks and wall paper paste. LOL I had a lot of success making following your recipes. God Bless your pea pickin heart. I saw your video about your husband. Don't ever give up your faith. I lost mine once, I'm still working on it. I don't give up. Your Christian focus is also important to me. I'm from the South but have lived in Europe for too long. Have been looking for something like this to have as a side for Breakfast and Supper (evening meal), also for a snack on movie day with some sour cream on top. YUM. I like it when you say, “don’t get in the ditch with” negative people. That is the message and I have told others not to get in the cess pool (or lower your standards)…if you get in the cess pool, you risk infection from those that live there. It spreads “disease”. As with staying in the positive space, it also can spread positively to you and others. 😀

Waza987 Yes, almond flour worked fine and this has become our favorite way to eat yellow summer squash. I like to use either peanut oil or avocado oil, but was hoping that I could use the air fryer for this, but didn’t turn out well. Best of luck!

basically a corn fritter using onions to replace the corn. i get bad heartburn from raw or under cooked onions so i put them in the microwave with a little butter first till firm but translucent then make my fritters

Your channel had been such a blessing to me. My Granny was a fantastic cook and made many of the recipes you have on your channel. Unfortunately Mama while being a fantastic Mama, had no interest in good ol mountain people cooking. So many of Granny's recipes have been lost with her. I am so glad to have found your channel to help bring these fantastic recipes back to my family for me and my kids. We all love everything we have tried from your channel. It’s so nice to hear someone talk about the love of Jesus how truly great he is. My mom would make potato fritters with leftover mashed potatoes and add one egg ,onion, flour,salt, baking powder, and a little corn meal. Fry as u did. Good! I

These look delicious! I love the taste of onion rings, but don't like how the long piece of onion always seems to slide out of the batter part & burn my lip/chin when eating them. So I rarely eat them, unless they're those chopped up ones from places like Burger King. These fritters are the perfect solution to my problem. Tasty, homemade onion-y goodness... & no blisters on my face! I can't wait to try 'em. I love this channel so much. I re-watch older videos just so I can have my "Hillbilly Kitchen fix" every day. I'm a widow & a cancer patient, so I don't get out much, except to medical appointments & the grocery store, so my "time" with Becky means so much to me. Her calming voice & sense of humor make her feel like a dear friend. I have no family to speak of locally, so my human contact is minimal. Becky's videos & comment section kind of feel like a special little club for me. She & I are close to the same age (I'm a bit older), so I'm hoping she'll keep making videos until we're both in our old age & ready for the rockin' chair. She's truly a blessing to me. We lost our husbands within a year of each other, so she feels like a kindred spirit to me. I'm sure if we ever met, we'd have plenty in common, & I'd probably talk her ear off. (As you can tell by my long comment, lol!) God bless the Hillbilly Kitchen family, & all the members of this community it's created. Also, today is Memorial Day 2023... Thank you to all our service members who paid the ultimate price to protect us all, & also those who are veterans, or are currently serving.
