The harvest season keeps on rolling, and we are back to harvesting green beans and getting them canned up. We’re also making pickled Dilly Beans and homemade french dip lamb sandwhiches with freshly made prepared horseradish dug from our garden.

This is my first year with a steam canner as well. Mind blown! The horseradish episode made me laugh out loud. I made a huge batch of fresh, prepared horseradish one day in our small restaurant kitchen in our little bar in Portland Oregon. I peeled it, blended it up and took ’ the top off the blender. Minutes later my husband came rushing back to the open kitchen saying “WHAT ARE YOU DOING? You just cleared the bar…customers are running outside!”😂

I really enjoyed this video! I love to see the whole family taking pride in their harvests. Sweet Buggy with her bucket of water for her cucumber was the sweetest! The boys have grown so much. I have been with y’all since y’all were searching for your land! One of my favorite channels. ❤️

I have to hand it to y’all, eating fresh horseradish is a feel-good pain I would not inflect upon myself🙃! I have seen horseradish being made and grown men cry like crazy! Those lamb sandwiches looked absolutely delicious🤗! Little Buggie thinks they’re pretty tasty too🥰!

I took a break from KZbin for a bit, and when I returned you guys have found the fountain of youth! Your precious girl and sons grew older, while mom and dad got younger. Whatever you're doing, keep it up, because you guys seem happy, relaxed, and younger than ever! Great crop of green beans there! You may get sick of 'em while picking and canning, but come mid winter, you'll enjoy those fresh picked green beans! Oh the cycle of life!

Old timers in my area would grind their horseradish OUTSIDE in the Fall. I think we can all understand why after watching your adventure! Great video. Thank you for sharing!

Oh my goodness! Your horseradish adventure! My husband and I giggled all the way through, waiting for the moment that someone put their head over the blender. We grind our horseradish outside, wearing ski goggles and a scarf wrapped around the nose and mouth. The first time we ever processed it, our son almost passed out from the fumes! If you are needing a recipe for canning.....13 cups ground horseradish, 8 cups vinegar, 4 teaspoons salt. Mix well. Spoon into jars but only fill jars 3/4 full. For pints, process for 10 minutes.

As someone who didn’t grow up with parents that grew their own food or preserved it, I love watching people can - it’s giving me the courage to give it a try myself when it’s summer in the southern hemisphere. So whilst it may feel ‘boring’ to you guys cause it’s always been part of your life, please know you’re helping to educate and normalise it to people who previously had no exposure.

What a treat. Fresh horseradish is so great!! Just a tip -- old timer say to harvest horseradish in months ending in R. Also once you grow horseradish in an area you will most likely have horseradish there fore ever Horseradish will come back & also the patch will expand - so -- you can get roots that are large & several years old -- which will require you to process it outside & up it's clearing capacity!!!!!!

Be sure to change your air filters frequently while you have smoke. We have swamp coolers and the year of the Telegraph fire the pads clogged up quick with smoke and ash particles, had to change them 3 times instead of the usual once.

Homegrown canned goods are so beautiful! Learning so much about canning and baking from Meg and it's so appreciated! I'm pressure canning taco soup while watching y'all today! Chicken, corn, onions, peppers, tomatoes...all from the backyard. Not everything in it is, but what a great feeling anyway!!

Meg the best thing I did for my jar lids, get 2 carabiners and tie some rope between them with a loop at each end that will slip over the caribiner. thread all your lids/rings by size onto the rope and then complete the circle. They hang on a nail in my pantry and are out of the way most of the year. I have 2 for each size I believe. If I need 10 rings go and take one end loose and then count them off and close it back up again. Cheap and very useful. Good job and yes feeding yourself is a bunch of repetitive steps all summer. I remind myself how much we will enjoy all of it all winter long and it helps for a few minutes at least, then I mumble under my breath some choice words and get back after it. I made my first dilly beans today! Only a single jar from my two little green bean plants. Small but mighty gardening! Usually we eat them as fast as they come in, but the wildfire smoke and weather has kept us out of the garden for a few days...thanks for sharing your day with us 😊

What a wonderful video today and thank you so much for bringing back a wonderful memory of my Grandad, after the 2nd world war my Nan and Grandad lived in London, a stones throw from the Thames and 10 Downing street. Although they lived in a huge house they never had a garden but every year my Grandad would dig up horseradish that grew like a weed near where he worked, he would dry it in the darkest basement and when it was ready he would hand grate it and make his own horseradish sauce, my sisters would never go down into the basement so I used to get to be with my lovely Grandad on my own 🤗 one day I went down to see him and my eyes really started to sting, so he dried my eyes and gave me a taste of the freshly made horseradish because it wasn't very strong that year - oh my goodness it nearly blew my head off so he ran upstairs to the kitchen to get me a drink of milk as he didn't want to get told off by my Nan. I spent many many happy times with my Grandad in that basement. When they moved to seaside town in Kent they finally had their very own front and back garden and they filled it with vegetables and flowers but never horseradish so I asked why they don't grow it now they could and my Grandad replied because it grows like weeds and once you have it you will never be able to get rid of it 😂 My Nan tried to buy him horseradish like he used to make but she never managed to buy anything that came close to my Grandads homemade horseradish. Thank you again for sharing your wonderful life and for giving me the wonderful memories of my Grandad. Love to you all as always xxxxxxx

Meg, try setting your jars in at an angle instead of flat on into the hot water, it reduces the shock on the glass. An old trick my gramma showed me.

I can watch y'all garden and can/cook all year round :). I love how the family jumps in and helps. Ben, hitting that canner...you need to remember that she knows where you live....lol. There are two beautiful sights for me and that's canned foods and fire wood stacked. Buggy and that camera, so stinking sweet.

Smoke sucks because it has no borders. We had smoke come up from the US lots of times too. It's never fun and especially not for the areas that have the fires or the firefighters. My prayers go out to those people and hope that rain is in the forecast soon without lightening. And by the way I'm never tired of watching canning or cooking or gardening because that's what your life is like.

My Mother use to let her canner water cool down and then water her plants with it. Just a thought. In Upper Michigan we are dealing with the smoke from the Canada fires daily, it has been bad. Praying for Canada. Blessings and Prayers

We grew horseradish on the farm. My sis and i would peel it but my dad would grind it up with a meat grinder. He was the only one who could do it. I like horseradish but not a lot at once. I miss it but doubt i could process it. Just to strong. Was fun watching you all get your first smell and taste. 😂

My grandpa used to take great pride in his homemade prepared horseradish. My eyes would burn when he opened the jars, it was so hot. I'm proud of y'all for being brave enough to eat it raw! Good stuff.

when doing a lot of water bath canning I don't dump the water out of the canner; just let it sit covered until I start the next batch tomorrow. It does cramp for space but I hate wasting water too

Wish I could show you my front and backyard when we had the fires up north in California. It was awful. My husband and I made the best horseradish ever but we were in tears for two days. We had the best time but it was painful. Ours was so good it made our head tingle. ❤❤❤

Here in northern Ohio the smoke has been a real problem. I can only imagine what it's like in Canada. We need to take the time and pray that these fires get under control.

I would argue that horseradish has far more of a punch than many a chilli pepper, the thinnest of smears of it with roast beef ideally on fresh baked bread is absolutely amazing and does wonders for blocked sinuses and cold.

Just cut tops off your horseradish and plant in the dirt. It takes a couple years to get roots. The longer they go between figs, the bigger the root and the hotter. Been doing this for over 60 years. Lol. Love the reactions. Also a blender works great, just add vinegar as you grind.

I love watching Simple Living Alaska, also. Isn't it amazing how you can miss some green beans. Good thing for the family helping with the produce. I just love the sound of lids going dink. I love horseradish, but around Iowa you are supposed to dig in the month with an r in it. You can cut the tops and replant them. When you grind it, please do it outside 😂.

When I was a kid growing up we used to go to Phillipis in Los Angeles Calif. The first time I ever went there was with my grandfather and father as a child, it became a family tradition. They had the best french dip sandwiches, the best homemade pickles, the best homemade macaroni salad, delicious fresh lemonade... the men in our family loved their fresh horseradish and spicy mustard. I remember thinking as a child that there's sawdust floors were pretty cool LOL. Great memories.😊

They say those of us that are self employed work 80 hours a week to keep from working 40. But oh the simple joys of working at what you love. I sat here and laughed along with you as you savored your victory over the string beans and then had the fun with the horse radish which I know so well. Mine was and is music. Yours is raising food (and kids, but that too is a joy!!). But how satisfying it is to work at what you love! I always enjoy my "visit" with the Hollar's. ❤❤

Hello! In our country, they like to do this: "horseradish root, garlic, salt, sugar and tomato juice." And horseradish leaves are added when pickling cucumbers, tomatoes, zucchini. We have a large selection of pickles and tomatoes. And we also really like to preserve vegetable salads, there is also a wide variety of them, and mushrooms, compote in large quantities, sometimes up to 100 cans of 3 liters. We really like to drink compote, we can drink 1-2 cans a day, it is impossible to freeze such an amount of fruit. You'll need an entire freezer just for the fruits.

Thanks for the steam canner explanation! I've watched multiple vloggers use them but never understood why one would switch out a water-bath canner. Interesting.

Your adventures with condiments today reminded me of a family story: We were all out for dinner and my father ordered a shrimp cocktail as a starter. When he tried his first shrimp, he called the waiter over and asked if they had anything stronger than tomato paste for cocktail sauce. The waiter excused himself and came back moments later with a horseradish root plus grater, looked Dad right in the eyes and said *"Say when..."* «grin»

What I have read, the best time to dig up horseradish is after a light frost. The small roots that I don’t grate, I wrap in paper towel, put in zip lock bag and store in the refrigerator. I plant them the next spring. I’ve never been able to dig up all the tiny roots so they always come up again where I dug the main plant .
