I purchase this every month and your article hits home, people ask me why I eat plant based and I ask themm if they are on any medications, and they always say yes, and then I say - that is why I'm plant based. I don't want any medications that never heal me and would need to get larger "bigger doses" down the road.

Thanks for the recipes. Regarding miso, I’ve learned that in order to get the benefits of miso, we should add it off the heat. Not to actually boil or cook it.

I have attempted spring rolls three times and they always rip. On Friday night I have up and it became a "spring roll salad" 😃! I ended up dumping all of the ingredients in a bowl (with extra julienned spinach) and drizzled my sauce on top. Still yummy! But I'll continue to keep trying. I will not be defeated by a spring roll wrapper! 😅

I have found Flax Meal sprinkled on say pasta or a salad (for instance), gives the feel of “traditional” Parmesan Cheese that I used before I switched to a whole food plant based diet (5-1/2 years ago).

I was wondering where the beans and pasta were going to come in, since you were calling it a "minestrone". That's a really clever way to portion things out! I've made soups with beans included, before, but sometimes I just want the vegetable base, as a super low-calorie option, so I'll make that and then add the beans, as needed. I think I'm going to make a batch and include some kale, to get my cruciferous veg in, via The Daily Dozen. Thanks for the inspiration!

Delicotta squash is another great one to scoop out and stuff. I am planning to use your breakfast sausage for this with the delicotta we are growing in our garden. Top it with cheese sauce and YUM!

Great, easy recipes for lunch. I made the minestrone soup. Such an easy and delicious soup. It's just lovely! Makes a great add-on to have with lunch salads. I added 1/2 cup beans, combining black beans, red kidney beans and chickpeas. Such an easy way to get additional beans in your diet. 😋😋

I crumble extra firm tofu and season it with taco seasoning to replace meat for tacos, nachos or taco rice. Also crumble it for Korean "beef" with rice, or to add to spaghetti. The family thinks it's close enough since I flavor it just like I would the ground beef in these recipes, the texture is just a little different (softer, less chewy but if I cook it long enough it gets chewier). Hope this helps!

Made spring rolls using sliced summer squash, zucchini, red, orange & yellow pepper strips, celery, sliced apple, black beans, marinated tofu (spritzed with liquid amino, nutritional yeast and baked at 400 degrees for 40 minutes, flip once), avocado slices, red cabbage, salad green leafs and shredded red & golden beets. Made stuffed zucchini boats using organic zucchini from our garden. Swapped out the rolled oats for 1/2 red quinoa and 1/2 brown rice. Also added in a 15 oz can of no salt added petite diced tomatoes. Topped of with Brittany's white pizza sauce (Recipe link: www.youtube.com/watch?v=HWT19YnAO) minus the artichokoe hearts & frozen spinach. DELISH!!!!!!!😋😋

I would like to make dishes like you. Next month I am going to make salads... like Dr. Furhman recommends as well as make a green drink in the morning and likely have it as well in the afternoon. I am eating using the circadian rhythm so will not eat after 6 pm or before 6 am... I will likely only eat 2 meals a day. I do fasting... I need to learn and make more recipes and as I grow will be making more of your dishes. How do I find your recipes so I can pick and chose? I will also read Dr. Greger's book within next 2 months. I have it here and want to incorporate his ideas into how I eat. I am also down 70 lbs and have another 25-30 to go. I weigh about 188 lbs and am a male 5'-10" (about a foot taller than you). I think for a few reasons I was able to have firm skin - I lost 70 pounds over 2 years slowly, I'm at a young age, and I do add in physical activity.

I’m also curious about this! Right now I wrap them individually in plastic wrap and store in the fridge and it works great. Same thing I do for sushi rolls. If anyone has a less wasteful idea, I’d love to hear what you do! :)
