I used the recipe you provided and I must say it came out perfect. I did have an issue with my tahini sauce. But I'm working on it. I had used tahini sauce, yum yum sauce and mayo with some lemon juice.

Toasted rye bread (or any dense bread of your choice) with goat cheese and packed sun dried tomatoes in oil is one of my absolute favorite, flavor packed and simple meals. Just delicious

Is your problem that you don't want a wine vinegar, or do you simply not like the taste of white wine vinegar? If you just don't like the taste then pretty much any other vinegar will work. If you have a religious or medical reason for avoiding wine products, then Apple Cider Vinegar or Rice Vinegar might work better. Failing that, you can always just use more lemon juice.

@@donpablo2170 for table use perhaps. But for cooking i find it much faster and theres no clean up. You just grind what you need and pour it into your food. For a decent amount of pepper it seems like im grinding forever with a pepper mill. With the mortar and pestle im done in seconds. A coffee grinder is also a good option but only for large quantities.
