I've been loving Thai food lately! Well, all I've done was Thai chicken, but I really realized how good Thai flavours are! This looks like such a wholesome soup! It's great that you've used corn from the cob. I'd totally love to try this out, very good for the winter months.

Looks so delicious! When I was in college I used to take a can of cheap 'cream of corn' add a pat of butter and some seasonings and call it my Poor College Kid Soup. This is next level and looks delicious. But I'm a sucker for anything coconut! 😁
