Hello, Well, my first batch was amazing, just like in the video. Since then I often have the gluten blowing up while cooking making it more spongy and less dense. Not sure what I'm doing differently except that I changed from regular flour to organic flour. Would that make a difference?

That is caused by cooking it too hot. Don’t boil the seitan. Simmer it very gently below boiling temp. If the seitan creates steam inside before the proteins is well cooked, the steam gets trapped and puffs up.

Vegan 5 years. Have never made seitan. I make bac'un with very thin slices of the vacuum packed tofu, extra firm. Marinate. Fry to crispy. excellent on BLTs! BUT... Will be trying your seitan and bac'un recipe. Thank you for the detailed instructions for both! PS, I just subscribed ❤

A good secret for all vegans is, when you make a veggie burger, is to make a special bread. At stores that sell protein powders, some products do not have vanilla added, and the unflavored powder is just as bland as white flour, replace 1/4 of the bread flour with this protein concentrate powder, add some baking powder to help the rising, and all the rest is the same recipe, and when the complete protein in the bread is increased, the option to make a veggie burger is no longer limited to beans. With this fact, you will not make a veggie burger as good as just throwing a cooked fresh portobello mushroom on a bun, in fact make it a double....This is a bit of a curve ball, in other words, forget about the veggie burger, it is all about the bread.....

Not only is this a way to not have to eat animals, but it is much cheaper than actually eating regular chicken and you get tons of protein whether your vegetarian or not this is a great source of protein and it is eaten all throughout Asia for centuries

@@AnushAnirudhan Sorry for my short answer. I have answered this many times in the comments. Let me elaborate. There are as many different reasons for vegans eating imitation meat as there are different vegans. Most of us grew up eating meat. It is ingrained in us from an early age and we still crave our childhood comfort foods. That is just human nature. So we will likely always enjoy the taste and texture. Some people are vegan for health and are looking for leaner alternatives to avoid saturated animal fats. Some are ethical vegans and do not want to harm animals. There is nothing wrong with wanting a "meat" meal that does not harm animals. Also, many people who are just transitioning to a plant based diet naturally first look for vegan alternatives to what they are familiar with. So, a few of the many reasons. Hope this helps. Realise this is an old video now, I may have even commented before. But just wanted to say that your videod process has become the basis for a vegan seitan roast I make each year for friends and family which as of this Christmas will be the third year in a row. It is the core of the dinner and it always goes down extremely well! First year was chicken, then beef. This year lamb! (Mostly this is just a change of stock and seasoning) I also use Vietnamese rice paper soaked in butter herbs and salt to make for a crispy skin. Something I picked up elsewhere online which is great. I don't suppose you had any tips on an approach to lamb using seitan? Thanks again for your video!

Thanks. I’m glad the video was helpful. I think the key to anything you want to do is to season the seitan with the same herbs and spices that are typical with the type of meat you want. For beef I look for rich darker umami flavors. For turkey I’ll use poultry seasoning with sage. Lamb is a tough one because it has that bit of gamey flavor that is hard to replicate but if you use rosemary and thyme in your seasonings it gets close to how lamb is usually seasoned. Juniper berries might add something. If you find a good lamb seasoning, please let me know.

Hi! Anybody who knows if I can make the seitan and simmer it the day before, and then fry it on a pan the day after to reheat it and get that frying crust?

Yes. That works great! The rest time will help firm up the seitan.

Depends I think. I prefer a very low simmer so the seitan doesn’t puff up. Steam is too hot

I’m using strong bread flour. You want as much protein as possible. AP flour is ok but with less protein you will get l as seitan.

Ah yess. Sorry I wasn’t very clear in the video. Do not boil the seitan. Keep a close eye on it and simmer it very low. You want it to cook below boiling temperature. The reason it gets spongy is because the water molecules in the dough reach boiling and turn into steam. That gets trapped by the gluten and it puffs up. So keep the temperature below the boiling point and it not puff.

I do use the starch water for other things. The other thing to note is that I changed the water frequently for this video to show how the dough changes as you wash it. In practice you can wash longer I between changes and use less water.
