They went to helms deep because it is far more defensive then edoras and they couldn’t fight an open battle because the rohirim were with eomer as theoden had banished them when under the control of saruman. They were also unable to raise an army like they did in the return of the king as it would have taken to long

In short, Gandalf giving this really poor advice comes from movie adaptation. Jackson wanted to emphasize that the way to Helm's Deep is dangerous, so he could introduce the Warg Scene and bring some action on screen. In the books, Gandalf and Theoden are not even arguing about this, as Theoden plans to meet Saruman forces only after reuniting with Erkenbrand, and Erkenbrand forces are not just pure cavalry, there are lots of infantry too.

4:42 in the books they first try to fight them in open battle, which is where they get crushed forcing them to seek refugee in helms deep. Theodens son also dies defending the river crossings and its already dead when the fellowship members arrive at court at least as far as I remember it.

4:41 there was the battle at the forts of Isen, in which Theodens son, Theodred was killed so ... there were open field battles. Its just that Theodens mind was corrupted and he banished his nephew (I think) Eomer, who kind left with a lot of troops.

They didn't try and fight the Uruk Hai on the plains with their horseman as Theodin had banished the Rohirrim from Rohan while under the influence of Worktongue. Theodin was left with a handful of professional soldiers and whatever militia he could muster. In that scenario, it makes much more sense to hole up in a mountain fortress rather than Edoras (which is basically a city with a wooden wall).

Wow they actually nailed Theoden's lifestyle tree. His military strategy went as far as hiding in a bunker and charging all his cavalry in, but the other two parts of the military lifestyle suit him very well.

I have only read the LOTR books. But I am pretty sure the whole point of Helm's Deep was that Theoden was making a bad decision, I also think that Aragorn or someone tried to talk him out of it. But then again, I have not read the books in years, so I might be wrong,

The movies don't go into great detail about the war with Isengard. There are in fact, multiple battles playing out along the Westfold, and many of the Rohirrim is tied up or not assembled. He makes the decision to leave as he doesn't have the troops to force a field battle, and his court is in disorder from the death of his son during the battle of the Westfold and Grima. I assure you, Tolkien makes sense of everything in the LOTR, and there isn't much in terms of plot holes to exploit. Unfortunately it's not always possible to depict that on film, so they made Rohan weaker than they should have been and then buffed them in the next movie.

You should try the Godherja mod. It has a functioning magic system and some awesome lore, as well as being created by the main guy behind hoi4 TNO. It has way more potential than this mod imo.
