Hey! This video is from 2011, so the video quality isn't quite was it is today in 2019 :) Also, single use plastics were more of a thing then. So rest assured I don't use plastic bags like that now. But I thought it was worth posting to give you a look at making a raw food meal from scratch, without a recipe. And yes, I do normally wash my veggies.

wow u r amazing.. thank u for this 30 min. I didn't think I was gona last the whole 30min but I am happy to say that I did and even took notes :) u r easy and interesting to listen to. I don't believe I have watched more than 9 min recipe video before... I love ur channel, I just cannot prepare all ur recipes cos most of the time I would need a dehydrator, which I cannot have at the moment :( but I still follow u and try as many as of ur recipes as possible. Hi love your channel / blog..whenever I am hungry and I want to eat raw and healthy and quickly which is most of the time I eat my grated carrots with parsley and garlic , lemon , olive oil etc..you recipe is for a "special" day as it takes a bit of time :-) What is the name of the root vegetable /you called "parsnips" ...could we do this cauliflower ..it looks like my favorite recipe but which contains gluten/ it's tabouleh ...nice variation . What is the name of this awesome supermarket..I wish we had this kind in France with ready sprouted greens ...as I want to go and check out the State at some point ...how did you find living in =Austin Texas ? Same I used to buy hemp seeds in =waitrose in the UK , in France it is in health food shops and it is about 5 times the price of the UK camp seeds !

Would love to see a video preparing a meal without going to the store. Like look in the refrigerator and start taking out vegetables or oil, the pantry for the nuts, seeds, etc. The meal looked delicious, and yes, it would fill me up, but typically I don't go to the store before preparing lunch. Fascinating.

I usually suggest overnight for all nuts and seeds. However, cashews are very porous, so can take on a good amount of water in 20 mins. Ideally all other nuts and seeds would have 4 hours, but if you haven't got that long, a couple of hours is better than nothing I'd say.

Nice video, thank you! My only concern is the high fat content. On raw, we need lots of FRUIT sugars for energy, then smaller amounts of fats. I think people start craving carbs when their raw diet is mostly nuts and avocado for sustenance. What has been your experience?

Yeah, I think it's needs to be balanced. I see a similar problem with eating too much fruit. The tendency is to promote very low fat, which is not good either. If someone is having an issue with balancing macros and not feeling their needs are being met, I'd suggest not trying to be completely raw.

I would love for you to do a recipe on a standard raw vegan "ground beef" or "meat". I had the most AMAZING raw vegan enchilada the other day and the "meat" inside was sooooo delicious even my non vegan friend was obsessed. It really tasted like the real thing. and the ingredients were on the package but I couldn't tell what was used for the meat besides mushroom and sunflower seeds.

Be careful eating raw mushrooms. They contain a carcinogen called agaritine. Agaritine is diminished but not eliminated by cooking/steaming at least 3 minutes. I had a co-worker who told me that he used to work in a mushroom facility which was located underground for darkness and dampness. Most of the mushrooms were for retail stores. Workers there had to wear a type of hazmat suit, covered from head to toe, along with a kind of respirator. This was to avoid breathing in any spores from the mushrooms. Some people had to quit the job because, inevitable, spores would get on their hazmat suits and sensitive workers could not even tolerate that much exposure without a negative reaction. I say this to say that mushrooms are best for their medicinal purposes when those compounds are extracted by a laboratory as medicine. Eating mushroom, whether raw or cooked, is not the best way to get those benefits. Consider penicillin which comes from mold. You would not eat molded bread to get the benefits of penicillin contained therein, would you. So don't consume mushrooms to get the medicinal compounds which are best extracted by a laboratory, not by the human body. Mushrooms are NOT plants but re classified as fungi and are NOT recognized by the body as plant matter but as foreign material that the body must work hard to break down and neutralize the toxins therein. Just because mushrooms are in the grocery store does not mean you should eat them. That is nothing more than marketing. PS I'm 62 and vegan 7 years. Just restarted raw veganism which I first began in 2019 but stopped in 2020 during the pandemic shutdown.

The Raw Chef Hi Russel. Thank you for responding. I’ve been trying an 80/10/10 raw vegan diet. However, I’m thinking that maybe ten percent daily calories from fat isn’t going to work for me. Maybe 20 percent fat will be ok. I stumbled across your channel by chance and I love the information you presented here. As I like my food well seasoned, Your channel gives me hope that I can maintain a raw vegan diet and not be regimented to mostly salads and salad type meals.
