A mansion literally is just a big house. So it's relative. Anything that is significantly larger than average dwellings during the same place and time is considered a mansion. Manhattan has hundreds of "mansions", for example, dotted all over the city (especially lining 5th Ave), but most are ugly (on the outside), boxy, and small compared to a typical Chicago suburb subdivision home, which costs only a fraction of a NYC mansion. It's all relative.

Not unique. There's a McDonald's on Jericho Turnpike in New Hyde Park, NY that is also in a converted mansion. It was the Charred Oak Manor restaurant for decades before McDonald's bought it and cleaned it up roughly 20 years ago.

It's actually illegal or impractical in the United States to turn most old historic buildings into commercial businesses like McDonald's because of so many regulations on historic and commercial buildings. To accomplish something like that would require you to comply with both sets of regulations. In most places, historic buildings would need complete remodeling and modernization to comply with commercial building regulations. Those types of renovations are not legal on buildings that are registered as historic places. So the hoops you'd have to jump through would destroy the charm on historic buildings anyway and make it pointless.
