Pepperoni and cheese are literally products invented to keep things edible before artificial preservatives, and these days are already as processed as they can be no matter which chain you get them from.

I think key to keeping some of that moisture is to use a zip top gallon size plastic bag to store the slices. The refrigerator will dehydrate the pizza in the boxes pretty effectively. Keeping the slices in a sealed up plastic bag helps preserve more of the original goodness.

some thoughts during the video 1) Cheese is already a low-moisture food + has a lot of fat, which means that it will lose moisture more slowly. The lower the amount of "free water" in food, the harder it is to remove more of it. 2) The moisture/water in bread is not entrapped in the bread's gluten as securely as cheese. This is because it is starting with more "Free water." That's why the crust and the dough will go stale and become harder to eat faster than the cheese. I think the curling of the dough is more likely it losing moisture (and therefore size) faster than the cheese. 3) Surface area is also a big factor in moisture loss. While pepperoni is a cured meat that should in theory lose water more slowly compared to dough, it's sliced pretty thin so it will dry fairly quickly. Same thing with the surface area of cheese, which will likely impact how fast it leaves. 4) Moisture leaves from the outside first. That's likely why the edges of the cheese became translucent first. 5) I'm guessing the tomato sauce oxidized. Pretty sure tomatoes oxidize when exposed to air for a decent while. 6) Thin layer of fat in the form of butter on crust might also help slow down moisture loss, but not that significantly. The length of time the pizza was baked for, the amount of each ingredient added by each restaurant, and the thickness of the slice will probably impact the slice too.

Sugar in the dough also impacts the rate at which is absorbs moisture from other sources as well as maintaining the water content present (its what's called a Humectant). Salt and certain syrups are also Humectants, which have the added benefit of slowing bacteria growth.
@uraumi478
@uraumi478 21 күн бұрын
@@smalltime0 Yes. They also lower the water activity of food dramatically which is why gas station pastries can last for so long (they have a lot of oil, salt, and sugar to preserve them by dropping their water activity). I’m guessing the different pizza brands are using different concentrations of everything in the dough.

I prefer my leftover pizza cold, BUT when I reheat I use a pizza steel. I like to make my own pizza when I can and having a pizza steel is so much better than a stone but for reheating pizza it works well too. Preheat the oven to 500, let the leftover pizza warm at room temp while the pizza steel heats, drop the slices on once the oven and steel a ripping hot and then check every two minutes or so until it's (re)done to your likeness. The bottom should be fried and extra crispy and the toppings warm and melting.

I've had it both ways. When I was younger, I had it cold or naturally reheated (I e. left it on the counter for fifteen minutes). Older, it's mostly nuked for thirty to forty-five seconds.

Depends on the pizza. If it's cheap pizza and I want to just have it fast I throw it in the microwave. If it's good pizza I put it in the toaster oven with a splash of water throw in the bottom

I eat dominos pretty regularly, I get the 12" medium pizza with extra sauce, helps a ton with reheat-ability. I reheat about 4 slices on a paper plate for 1:30 on power 8 (80% power) in my microwave. Sometimes I'll add a wet paper towel over the pizza to reintroduce some moisture, but that only does a little, its still a bit dry. I find I usually have to eat the pizza within the first 3 days after ordering, otherwise it loses its flavor, texture and moisture.

I reheat with a microwave. However, it has a lot of settings and a pizza steel, so I usually heat up the steel for 4 minutes, then put the pizza on the preheated steel and use the "crisp" function for 2 and a half minutes. Perfect every time

I go with a standard microwave reheat for my Domino's leftovers. I can eat the pizza cold, but that 45 seconds in there or so makes a solid difference.

throw pizza in the microwave (bonus points if its on the plate that bagel bites come on) for about a minute, then throw it in the toaster oven until it's crispy, gets the bottom nice and crunchy and the cheese gooey with minimal effort

Best method I've found is hot pan in the oven! Preheat to 350 or 400 depending on the pizza size/type, with the pan inside. Put the pizza on the hot pan once oven reaches temp, and heat for 5 minutes. Closest I've gotten to fresh since working at Domino's :)

Here's my time tested, certified, best way to reheat leftover pizza. First of all, the preparation is paramount! Instead of storing the pizza in its box, put it into an airtight container! This way, it loses significantly less moisture. When the time comes that you're ready to have a leftover slice, break out the air fryer, and pre-heat it to 450 for 3 minutes. Pop in up to 2 slices at a time, cooking them at 325, for one minute at a time (i.e. check on them every 60 seconds), until the cheese just barely becomes gooey. At that point, crank the air fryer up to 450, and let them cook for 1 final minute. Let them rest until cool enough to eat, and enjoy your perfectly reheated, gooey cheese with perfectly crispy crust, leftover pizza slices.

If you don’t have an air fryer or a toaster oven, microwave your pizza alongside a cup of water The water evaporates with the heat and brings moisture back to the crust preventing it from drying out as much

I love your videos Sam. Is there anyway you’d be able to use a less abrasive color than white in so many shots. You have a relaxed background in your studio and then it rapidly shifts sometimes to white which is really bright if you’re watching at night or something. Thank you for what you do.

For reheating pizza in the microwave, I fill a microwave safe cup with a small amount of water and place it in the microwave with the pizza. Then heat for 45 to 60 seconds depending the size of the slice. It comes out nice and steamy with the cheese re-melted, so GOOD!
