Agree, Eric ...this is an excellent guideline for our staff who are based in the countryside in Upington, Northern Cape, South Africa. They have not been exposed to a bit city hospitality industry, therefore this is nice and straight forward for them to follow :)

Amen I’ve been managing for 2 years now. I was one of the top servers for 4 years prior. I asked for the position because we kept hiring managers who were lazy and rude and didn’t do anything to help or lead. Now I’d say I’m the 1 manager of 3 total who is constantly coaching and problem solving in a shifts. It’s a vital role to make sure each shift is smooth and successful.

Hey, Ryan! I’m applying to be promoted internally though my restaurant to be a manager. I just did a quick KZbin search on “restaurant manager skills” and your video was first. I love the music conductor analogy as to what a manager is. I’m 24 and want to learn as much as possible to become a great leader. In my eyes, a great leader has people doing the right thing even when they’re not around. Some managers I’ve had in the past, people will say: “oh is around? Oh they’re not? Good!” And then start slacking off or bending/breaking the rules. I do the right thing when my manager isn’t around because they’ve taught me well! I strive to be like that.

I currently work in a senior community as an Activities director, and I applied and was given the kitchen manager position. I do have 12 years as a staff supervisor experience under my belt. And that is what they were looking for. Anyway, I'm so happy to have found your videos, channel and website. I love how your videos are short but jammed packed with essential info. Wow - thank you so much! You definitely took a big leap, but I can see how there are a lot of similarities between the two positions. Like you mention, supervising staff, but also keeping things well organized. Great video about management and we all know that management will have to baby sit, but I think you forgot the most important thing which is leadership and most importantly training and crouching will alleviate the baby siting. I think you should talk about leadership because it's very important for Manager to understand what it means.

I'm moving into restaurant management after many years of FOH experience. I feel excited and confident in my abilities to manage in most areas. What I'm concerned about is how to deal with staff patiently when I have to tell them a third, fourth, fifth... time. Any tips for staying positive and patient with young / inexperienced staff?

I have been a restaurant manager for 17 years and I find it easiest to maintain and stick to my standards regardless if it's my best employee or my worst employee. If you play obvious favorites the rest of the staff will know..so..3 documented strikes(depending on the seriousness of each offense) and you're out. You as a manager should be molding a staff that will be able to fill in gaps where others fall. Servers are a dime a dozen..good cooks and bartenders are a bit harder to find..but it's best to cross train employees in arena's that they are interested in which the reward to you and your program is loyalty and a solid effort. Remember to stick to your guns. If you have to tell a staff member 3,4,5 times to do something chances are they lack respect for you or their jobs and they MUST be removed. You have to cut cancer before it spreads to the rest of the staff. YOU GOT THIS.

It's all great pep talk,but very general...mgmt on the floor requires first and for most analyzing skills and overwatch...at the end of the day you summarize mistakes and tell them to employees and in the morning you do it at briefing for the other stuff too.

I don't think management should be all about focusing on employees most of the day I think it's kind of ridiculous, employees don't want to be in a situation where they being watched and look over from the time they get there to the time they leave what kind of job is that.

I am thinking about a new type of restaurants : eating-spots, in eating-spots, food keeps changing, chefs also rotate, this is opposed to current restaurants, thanks to this rotation of food and chefs, eating-spots are way more powerful than restaurants. along with that, there is an app, people vote for the food that will be cooked in the next days. menu is influenced by the live input of the people via an app.

I really enjoy listening to you. It is very helpful to my job position as Assistant Manager. What should you do if the Restaurant Manager plays favoritism with certain employees? Here's an example: We're going through the lunch hour and when it starts to slow down the Manager and two employees head to the office, get out their cell phones, get on Snap Chat or whatever social media site and talk while the rest of the crew continues working.

Hey first time watching a video of yours loved it. Im a first time manager of a restaurant that I served at for a year. i have recieved this promotion with great excitement but worry that my now fellow managers have grown complacent and jaded. How do I take from them the knwoledge they have (but seldomly used) and continue to grow in this exciting field without falling into the same rythems of "them". I want to continue to grow and learn and be amazing at my job... my career. Money does not fufill me, Knowing im doing a fantastic job does. This in it self is noble at heart but translates to profit for the company. This new role frightens amd excites me, I have worked at many restaurants, never being at such a place that runs 12 mill in a year. SOOOO... I agree with you in just abo it everying. Babysitting, however is a delicate balance. Your team needs to feel like you trust them, and constant babysitting can undermine this. If you have a great team, let them do their job and just focus on the employees that aren't up to par.

Great analogies and description of the manager role. Any multi-unit business that has conducting managers thrive. The organization needs to make the decision early on if that’s the formula to follow because an orchestra will only have one conductor with an assistant ready to step in. Literally creates a fraction where the company has to “fund” the big number to get the small one. They must decide early how to handle the times there’s a mismatch where they accidentally placed a salesperson in the GM spot, or an operator, or social influencer. As important as the GM role is, the leveled up roles are exponentially more responsible for the success of the manager level. This is where the management skills might need to atrophy a bit and make space for leadership. The two might have the same function and be responsible for an end result, but they are almost inversely related. It’s impossible to be the best at both. Having leadership in each unit can be good as well so they could prepare assistants for a leadership role, and cross train the first seats for future assistants, while identifying the next first chair and always be using the bottom performers as an opportunity to delete and make space for an upgrade. Some organizations do well with leaders running single units while assistants are developed into great managers. I’m reality, if an organization wants to have multiple units, they’ll need to allow both. Forcing a leader to be the best manager will result in both an underperforming unit and eventually a vacant position if nobody, ie assitant mgt, isn’t fulfilling the role. It’s as though the manager better describes a job that must be done. Much can be delegated but skmebkdy must do it and know that’s where their role is. You can have the best line cooks in the business. But if you have the worst servers you’ll probably have the worst business in town, and if there’s no dish washers, they’ll literally be no business. Ive seen good leaders come and go because they were put into GM spot with no one trained or prepared to do the manager role. I’ve also seen where time and space was allowed for the leader to develop the manager role. Once again though, it falls on upper management to recognize the environment and set up the line so it can still produce.

thank you sir. im a manager for 6 months and still learning. i need alot of help. did not have training at all..after matriculation i was just thrown in managment. and for the 1st 3 months they taught me nothing. i still know nothing its not a passion of mine but if i knew more i would have mabey developed a love for management

hello from south africa. My family started a full service resturaunt about 2 years ago and there hasn't been any visible profit at all. The biggest concern is staff is suspected of stealing both food and money in a variety of ways. The cost of food alone is about 62.5% of total revenue! This number simply blows my mind. The resturaunt is tanking. I just found your channel and will look for as much information as I can. Thank you so much for this. God bless you

The Restaurant Boss Hi Ryan, I meet with my Store Manager, But I do not think I was successful in getting my real concern across to him. Perhaps, giving a background info might help. I am a new restaurant concept in a market and my biggest concern is consistency and Quality. I have called the Manager on it in a few occasions, but I believe I must not be approaching the situation effectively.

I think a part of the problem is that owner operators are not willing to invest proper salary to attract proper management talent. They would rather take 15k and put it in their back pocket as opposed to putting that additional 15k into a GM's salary. But if you invest in a good, adequately salaried GM upfront you will get everything that you're expecting and you will see a return on the backend. For example the national average salary for a restaurant general manager is $55,000, I make $68,000, and Manage my restaurant as an owner. I have a true passion for management that genuinely excites me. I live and breathe for all of the things that you described most managers find as boring. I love habitual consistency that I am faced with on a daily basis and controlling all the metrics in every aspect. It's simple, a restaurant general manager should know the operation in depth more than an owner because you're there running the operation physically on a daily basis with an Owners mentality.

ummm, I bet you would manage as an owner because you are that kind of person, you get paid more because you have proven yourself. I don't agree with paying first and then "getting better employees". I think the issue is not pay but how employees are treated and trained.
