Inland provinces of mainland China (Yunnan, Xizang/Tibet, Sichuan, Chongqing, Qinghai, Xinjiang, Gansu, Guangxi, Shaanxi, Ningxia, Inner Mongolia, Shanxi and Guizhou) always have interesting cuisines owing to the presence of ethnic minorities, history, geographical locations and interactions with the rest of the country. One should probably look at millennial and generation Z Chinese folks with their changing tastes and perceptions of regional cuisine

So glad you all made it to Lotus Eatery and enjoyed it, it's one of our favourite restaurants in Shanghai. One of our good friends is from Yunnan province and she would bring us back homemade cheese made by her mum called "rǔshàn", yet she never realised it was cheese! Tash & Kerry!

IMO, Yunnan is the best Chinese cuisine. It comprises all the flavors from its surrounding countries: Thailand, Vietnam, etc.
