Scott - i just love your funny, subtle way. Kate tells you she's painting yogurt and lichen on the rocks and you reply, "That's nice." I don't know why, but that struck me as so sweet and endearing. I love the dynamic between you two!

The ending was funny. Two thumbs up from Scott! Whenever my wife goes away for a few days, the cats and I enjoy a little alone time. Of course when she returns I'm always presented with the "did ya miss me?" question. Of course there is only one right answer to that! Well Katey lam 73 years old l really thought l knew quite a lot but today l have been told by yourself that l can freeze flour .wow this l didn't know ....👍

As long as you let it come to room temp before using it, it works perfectly (you need to do that even though it doesn't freeze solid). It keeps for donkeys years in the freezer. Never becomes stale or gets bugs. 🥳 🎉 🪅 🎊 🍺 🍻 🥳

@@TheScottishIsleI freeze only for a short period to kill and bugs in the flour and then vacuum seal the flour in half gallon jars, this also will keep for years

I was told years ago to freeze it when I bought it to kill any insects, weevils etc. Freeze for 2 weeks then leave it in the cupboard.

I was surprised to hear you could freeze flour. Question...Does this apply to both white and brown flour or is it just white flour?. Was it you Katie who also mentioned in one of your videos that Wheat berries can be stored for years.?? If stored correctly they never go off?? No quite sure if you said this or I saw it on another channel. Lots of stuff about storing foods we just don't know.

A nice visit with Mom. She must love having you home for lots of wee chats. Absolutely loved Edinburgh. Coming from Canada….all that history, the castles, the glens as we travelled around. So many fond memories. So wish we could go back but now , age has its drawbacks to travel. Now, I can sit back and travel with you two. Such a pleasure.

We often freeze flour here in Qld Australia in the wet months. I like your idea of making Sourkrout, I'm 78 and never made it myself so will give it a go. I love it when you give us recipies and traditional food dishes to try. Your voice is so beautiful to lusten to and when you sing its a delight to be hold. Lovely on the Island and hard work too--admire you two!! 6 year-old granddaughter and I dug a bucket of Jerusalem Artichokes, so I scrubbed them up, salted them along with carrots, garlic and ginger and set aside to ferment. Lacto bacillus do all the work. LOL 💖

We used to mix bits of moss and plain yogurt together in a blender and spread onto clay pots to make them look like they had been around for years and years. (with mixed results) I also remember my grandmother making sauerkraut and I would sneak the salted cabbage out of the crock to munch on. It wasn't easy sneaking that either, as you had to remove a huge rock and a plate before you could get to it, but it was so tasty and so crunchy. I hope your mixture works as expected.

Ive still got 1 of my mother's 3 crocks. Have never taken to frozen beans, still prefer them salted. That's what was in the crocks.

Really love the harp music today, even more lovely than it usual is. Also very much enjoyed the sweet wassailing melody. So nice to see Moss Mountain coming along and your inventive yeast/milk/lichen wash. Also have been wanting to prepare my own sauerkraut and was fascinated to see how you were doing it. Good job freezing the flour - it kills any wee beasties that might be liv'n in it. Job well done getting started with wood for next year. Been watching for a while, love seeing Scottish island life all green and wet, very easy to visualize old tales of Mallory or Pyle or even Jack Vances Lyonesse series while watching, love the harp but it would have been nice to hear the birds instead of harp. I'm not sure if I believe in 'genetic' memory but being of welsh/irish decent seems to stir something up in me seeing y'all's homestead. Thanks

It must get tiring having to set-up the camera when filming oneself. Position the camera, walk away from it around a bend, walk towards the camera while it’s filming (and then having to edit it all). Must take ages to film and put a vid out 🫤

Sauerkraut in holland we call it zuurkool we eat it in winter with "worst "( sauges) and Of course with patatoes Cook it for about40minutes and mash it up You like it ore you don,t You can put some appels in if it,s to sauer I hope you wil enjoy it xxxxx

Hello Katie and Scott, great video today, Katie I have question ? The red lids for the cabbage you cut up, what are the two off-white colored button types on top of the lid for? I haven't done any canning so I'm not sure what that would be for? Is it too release part of the pressure in the jar as it builds up? And if that's not the case, what is the use of them? Scott great cutting video today It's too bad you ran out of petrol for the chainsaw not allowing you to finish cutting the logs. Better luck next time. Exactly that; they're fermentation lids, which let the building gases escape. Otherwise you'd have to keep doing it manually. Kx

Someone told me once that painting yogurt over a surface outside, would encourage green growth to appear on stonework. I can’t remember if it was the 1st April, when I was told that or not !!!!

Loving your videos after finding you a few weeks back I have binge watched up to date now , if I lived on your island I would get a barrow load of beach shingle whenever I had nothing to do and tip it on the path between the cottage and the woodland that is always boggy until it was thick enough that we weren`t walking through mud all the time compact it by driving the quad over it ? just my thoughts , Scott have you read much of JRR Tolkiens other works and those of his son Christopher ? and lastly as I do go on you said in another of your videos you couldn`t remember what you got bathed in when you were a child we used to get bathed in a "tin bath" when I was young in Yorkshire as the house we lived in had no hot water there was one cold tap for the whole house the toilet was outside we used to hang the bath on a nail outside the back door and mam would boil water in a " baby burko hot water boiler " like the ones in workmens sheds on building sites there was 11 of us lived in the house too in the late 60`s early 70`s I dont know how mam did it she was a 4ft 11 inch wonder woman

Hi Katie, I very much enjoy your channel. Small suggestion: When you’re using a larger knife, pinch the blade with your thumb and forefinger as it will give you much more stability and control when you’re cutting

I am now serene after watching your calming day. Loving the birds, they are not back yet here in wales, but I'll put some feed out just in case. I, really, never knew about freezing flour. I'm going to do this. Is it ok then for bread making?

Just let it warm up to room temp before you bake with it, and there is no difference than normal. Kx

In my experience, so long as you let the flour come to room temperature before you use it, it works perfectly. And lasts in your freezer for soooo long. Kx

I am so impressed to se someone else putting grated carrots into there saurkraut. I do to, plus I add a tablespoon of caraway seeds. I did notice you were using the white salt, hopefully not iodized salt. The iodized salt has had all the good minerals taken from it. For years I have used the Redmonds salt from Utah, which is mineral rich for our health. The taste of this salt is amazing to, nothing like the iodized salt. When you acquire new pet sheep please consider Hebredean breed, it spins so nicely directly from locks, with no preparation! It’s my favorite spin. I spin on drop spindles as fast as on the wheel.

I’ve just started following y’all and was wondering how you got your food. Watching you cook you had everything. Then I saw you boat to a road then you had a car parked. How often do you drive for food? I saw you boat to some little town and brought things back. How did you get furniture there. Where do you get your recipes? Are all the old houses on the island too? The ones you have shown. Blessings on your journey.

We mostly have the food delivered to our access gate over on the mainland, so that takes a bit of planning! Some of the recipes I use are from my grandmother's cookbook - I've done a few in various episodes, so you might enjoy looking back over some of those. A lot of the ruined crofts we show are just over the sea channel where we cross over to the mainland; there were lots of settlements over there. We hope you continue to enjoy the videos. Kx

Why don't you stack your wood in the wood crib? When I was younger that was one of my jobs, Dad would get cords of wood dropped off and it was our job to get them stacked. Stacked well enough that he could fit a square tarp over it for winter. Then when dating my husband I got to help my husband and his father stack their winter wood fuel.
