These eggplants are so delicious that I cook them 3 times a week! No frying!
Hi everyone! In this video I propose you a perfect recipe for this summer! I cook them very often and I never get tired! Breaded aubergines with rocket and cheese pesto are really delicious and easy to prepare. You won't have to fry the aubergines! This recipe is light and baked. In just a few minutes you can prepare an eggplant delight for lunch or dinner that the whole family will love! Ingredients:
2 eggplants
60 gr of pecorino or other cheese
For breading:
150 grams of breadcrumbs
50 grams of Parmesan cheese
1 clove of garlic
Salt, pepper, oregano
For the pesto:
80 grams of rocket
10-12 hazelnuts
2 tablespoons of Parmesan cheese
30 ml of olive oil
1 clove of garlic
Salt and pepper
