Hey, Chef. Someone may have already told you, but I figured I'd chime in. That "skirt" on the wings in Yukihira's gyoza wasn't parmesan. That's actually a real Japanese version of gyoza called Hanetsuki Gyoza (Gyoza with Wings). The wings/skirt is actually fried starch! Much easier to replicate than frying parmesan, and way more crunchy. Hope this helps!

@@ZainxIqbal They state quite explicitly in the manga and the anime that he's using parmesan. Hanetsuki Gyoza were definitely the inspiration, but the judges talked at length about how the flavor the parmesan was key to this dish.

Just made this, reporting in: It's pretty awesome. I wasn't convinced about the sweet-sour sauce while taste-testing, but together with the chicken and filling it ultimately was amazing. 1. Unfortunately I didn't have the sake or Hoisin sauce available, so I added a shot of Mirin and Oyster Sauce to the filling and a splash of Mirin and Rice vinegar to the marinade instead. As far as I can tell (with my sample size of 1) that didn't negatively impact the flavor, but I definitely want to redo this when I have all the stuff. 2. De-boning chicken wings is hard man. My first time success rate is 2/9, with one ending up completely destroyed (was the last one and I got frustrated

It's all practice that's for sure. The deboning isn't easy in the slightest and the Parmesean tuile is super temperamental. It's worth it in the end though!

I actually did this on our degustation chefpk! I was the executive chef on that restaurant simulation that night and sadly this is the only recipe i took out of shokugeki :( . The skirt around the gyoza is normally made with a starch slurry poured in after frying, lid on to steam and whats left is that skirt.

After watching the video I decided to make these. I thought I had the ingredients, but somehow I didn't have sugar. How is that even possible? I tried and failed at a few alternatives for the sweet and sour, but eventually I went the lazy route and used some buffalo wing sauce I had on hand. It was glorious. Another cool way of plating could be to place the plate on top of the nonstick pan and flipping the wings onto the plate to maintain a whole sheet of the parmesan.

my favorite kind of chicken wings is honey glazed with a homemade Mango-lime-raspberry and Jalapeno sauce. let the meat marinate in this sauce for about 6 hours in the fridge then sear the meatonce it starts to get cooked and caramelized you pour some honey ( I used Rose honey) on top of it. put in a overfriendly pan and let it grill a little. Definitively gonna try to stuff them with fruits next summer. ( maybe try mixing this idea of stuffed chicken wings with the apple dorayaki.)

i make wings similarly but i stuff mine with a whole shrimp and minced fish, and the sauce i use is mala + boiled down diced peach in orange juice (sort of like making a jam) another is i make a sauce by boiling yuzu juice + some honey until i get a thick consistency then add some wasabi to liking.

When I saw this episode it blew my mind because my family and a good chunk of my friends and community members have been making stuffed chicken wings since before I was born. We typically fill it with eggroll stuffing but all the same, delicious! One of my favorite foods to eat and make.

We do something similar. Instead of a gyoza stuffing we have an eggroll stuffing. So cabbage, onion, meat, eggs, salt, black pepper and thin rice noodles, sugar, soy sauce, hoisen sauce and oyster sauce. We also deep fry it rather then pan fry it so it crispy all over. Since the stuffing will take a little bit longer to cook you often have it where the bone and cartilage in the remaining wing also gets nice and crispy so you get a nice added piece of crunchy chicken.

Nice. I followed another youtube to make these. The main difference is I used fish sauce in the Gyoza and I marinated the chicken wings in the sweet and sour BBQ sauce over night. I do love hoisin sauce though. I'll have to try that. Thanks for the tip with the parmesan too.

@CHEFPK i did deboned stuffed wing in the fine dining restaurant i worked at i used to have to debone a box of wings (like 10 lbs) in under 30 mins i found the easiest way was to place my fingers at the top of the joint and force the meat down the the bone and then pop out the two bones at once takes practice but once you got it super quick i think my best time was 22 mins for 12 lbs (hard to remember it was like 7 years ago) they were a great seller though and take many different fillings well my chef did a variation of them when he won chopped canada (matt Kershaw)

After watching this Food Wars episode I made stuffed wings the same way you would a stuffed pepper, cooked them up in the pan then I took them out and fried them up chili relleno style in a batter. The key to it is to separate the whites, fluff them up like you would say pancakes before incorporating them into the rest of the relleno batter. So good.

A spoonful or two of chinese hot oil in the pork mix and a light dusting of smoked paprika on the wings while theyre in the pan so the heat blooms it up. Would add that spice and a little more colour. These look awesome as is though, Chef. Keep the recipes coming.

If it's a party thing, it would be smart to have a few different versions of this. Maybe like 3-4 varieties so that people can pick and choose. Granted this would mean extra work, because you'd need to make sure you got a ton of wings. Obviously the one from the show would be the main attraction of them, but you could do some other odd versions. Have one that is akin to a taco or burrito, do one that is mac'n'cheese stuffed, and lastly a spicy one for those who are daring.

The problem i have with chicken wings is the bones and lack of meat. Thats such a wonderful solution to it. I guess there much more work involved than regular wings but you dont need a lot to be filled.

You asked me what are my favorite wings(I know you meant the whole audience but still). It’s Tebasaki fried chicken wings. A recipe made by chef Rie(don’t know if she’s a real chef but the wings spoke for themselves). Anyway, for the wings themselves, I used potato starch to cover them, then deep fry them once to fully cook them, then again with greater heat to give them a crispy surface. But it was the sauce that made it great. For sauce I boiled soy sauce, sake, mirin, sugar and garlic powder(it was supposed to be one garlic, but I’m not fond of garlic chunks). OnceI fried the wings twice, I dipped them into the sauce. Funnily enough, the first two times I made it, it was very salty, but still great. After that, I tried low-salt soy sauce and it was a definitne improvement. Still I wondered why I couldn’t get it the same color as Rie did. And then at Christmas, I got light soy-sauce from Muji as a present from my little sister and tried to make the wings on New Year’s Eve. Using the light soy sauce, I was able to make the best wings I have ever tasted. Even my big sis complained that I had ruined wings for her. Still fantasizing about the day she goes to a new wings restaurant with her friends,and when she tastes the wings, she would say to them, ”My little brother makes better” XD.

Thanks for showing how to debone the wings! I think thats the only thing that ever stopped me from making it sooner. I wanna try a buffalo wing and bbq wing version of this recipe for party plates. I don't know if that would still count as gyoza, but I think it would be tasty regardless
