I dry brine with a ratio 2 cups brown sugar to 1 cup kosher salt. Also pull the skin off and pull the pin bones prior. Next day, the filets get rinsed, dried on a wire rack in fridge then out for about an hour before hitting the smoker (pellicle formation; doesn’t stick to rack). I pellet smoke with apple heat and a smoke tube with cherry in the chamber. I’ll try alder next but this method is hard to beat; everyone loves it.

@@AddictedFishing so this is the third time I type this reply haha, apparently I can't send links. I'm not knowledgeable in types of fish but I did some research and the list is huge. Some are: peacock bass, atlantic blue marlin, mountain mullet, brown bullhead, grass carp, common carp, swordspine snook, tambaqui, Mapiro (fat sleeper), striped mojarra, yello fin mojarra, bluegill, nile tilapia, burro grunt and the list goes on. Depends on what side of the island you go to.

Put a fan on the cured fish and cut the time by at least 1/2. Good tutorial on smoking...Having a nice dried surface (pellicle) before going in the smoker is super critical for the best smoked fish...

I find that removing the pinbones is much easier post smoking. The meat shrinks away from the bones and the cooking loosens them up 😃

Marlin.....A little tip to make your life easier with the pin bones....leave them in when you brine and smoke the filets. After they've been smoked and cooled off you can pull the bones out really easily. They really protrude out of the filets due to the meat shrinking during the smoking process. I do a similar dry brine as yours and baste the filets with Tiger Sauce (Pepper Sauce) before covering them with the dry brine. And a honey/lime glaze like you do in the smoker.

I use a wet brine. After the pat down I rub maple syrup on them. Use some apple or cherry wood that I soak over night. Last time I smoked the trout I made earth oven. Delicious 👍

I used A dry brine same recipe as you do Marlin except for after I rinse and dry I based it with cinnamon whiskey I smoke it with apple and cherry Chips gives the fish a little bit a milder taste.

Dry brine for sure. 6-8 hours. Pulls a ton of moisture out. Then pat dry and wait for a pellicle to form. Then into the smoker.

I used a wet brine for years but was never completely satisfied with it then I found this dry brine and I love it. I personally find that basting them with honey made them a bit too sweet for my taste. You should try coarse ground black pepper, you might like the flavor a little better. Great job as always.
