Today was such a fun day of summer steelhead fishing with Jordan, Popov, and Marlin. A bit of a late start turned out to be an epic day of steelhead fishing. Marlin also shows his favorite way to smoke fish. Thanks for watching ADX!!
Smoked Fish Recipe & Brine:
2 cups of brown sugar
½ cup of Kosher salt
¼ cup garlic powder
¼ cup onion powder
3 teaspoons white pepper
**This will make enough for about 4 medium salmon or steelhead fillets**
Smoking Directions:
1. Grab your Tupperware containers and cover the bottom of the container with a layer of brine mixture.
2. Then, place the fillets in the container, skin side down.
3. Once the container is full of fish, completely cover the fillets with the mixture with 100% coverage.
4. Refrigerate & brine for 24-36 hours, flipping every 6-8 hours.
5. Remove from the refrigerator and rinse your fish of all the brine.
6. Dry on a wire rack at room temperature for about 2-5 hrs, or until a slight yellowish film appears on the salmon or steelhead.
7. Smoke the fish at 150 - 180 degrees Fahrenheit for 5-8 hours to a minimum internal temperature of 145 - 150 degrees, held for 30 minutes. NOTE: The higher the temp of the fish, the dryer the fish will become.
8. Remove from the grill, and wrap in aluminum foil for about 15 minutes to settle the juices.
9. Now it's time to eat, ziplock it, or vacuum seal it.
10. Smoke fish will last in the fridge for 10-12 days or it can be frozen to last a lot longer.

Hey guys great video reminds me of my younger days. Just recently retired I thought would spend time with my best buddy fishing . Unfortunately he passed away at 57. Good to see such good friends making great memories. Keep on fishing and cherish the moments you have together.

Got 4 summer steelhead this year out of the creek of all things! Knightmare and coonshrimps under a bobber!! Crazy how much bigger the fish you guys were catching! Keep it up boys!!

I find that removing the pinbones is much easier post smoking. The meat shrinks away from the bones and the cooking loosens them up 😃

I dry brine with a ratio 2 cups brown sugar to 1 cup kosher salt. Also pull the skin off and pull the pin bones prior. Next day, the filets get rinsed, dried on a wire rack in fridge then out for about an hour before hitting the smoker (pellicle formation; doesn’t stick to rack). I pellet smoke with apple heat and a smoke tube with cherry in the chamber. I’ll try alder next but this method is hard to beat; everyone loves it.

I smoke my fish the EXACT same way. Only difference is you used a lot more garlic and onion powder and now I'm gonna try using more. 👍👍👍

@@AddictedFishing so this is the third time I type this reply haha, apparently I can't send links. I'm not knowledgeable in types of fish but I did some research and the list is huge. Some are: peacock bass, atlantic blue marlin, mountain mullet, brown bullhead, grass carp, common carp, swordspine snook, tambaqui, Mapiro (fat sleeper), striped mojarra, yello fin mojarra, bluegill, nile tilapia, burro grunt and the list goes on. Depends on what side of the island you go to.

I use a wet brine. After the pat down I rub maple syrup on them. Use some apple or cherry wood that I soak over night. Last time I smoked the trout I made earth oven. Delicious 👍
