How to Make Fresh Corn Salad

• 5 ears of corn shucked
• 2 roma tomatoes diced
• 1 english cucumber diced
• 1 avocado diced
• 1/2 red onion minced
• 1/2 cup fresh basil leaves chopped
• 1/4 cup fresh mint leaves chopped
• 3 tablespoons cider vinegar
• 1 tablespoon red wine vinegar
• 1/4 cup extra virgin olive oil
• 1/2 teaspoon salt
• 1/2 teaspoon freshly ground black pepper

1️⃣ 00:00:16 - Bring a large pot of water to a boil over high heat. Add ears of corn to boiling water and boil 5 minutes. Drain and pat dry. Use a sharp knife to cut the kernels from the cob and place into a large mixing bowl.
2️⃣ 00:01:03 - Toss corn with tomatoes, cucumber, avocado, onion, basil, and mint.
3️⃣ 00:02:20 - In a small bowl, whisk together cider vinegar, red wine vinegar, olive oil, salt, and pepper.
4️⃣ 00:02:38 - Pour dressing over salad and toss to combine.

I LOVE corn! Corn and watermelon are two major reasons why I love summer foods so much. This salad is right up my alley! Last year I made one with grapefruit and oranges, it was so good! Corn goes so well with a ton of different flavors

Normal vinegar is too strong. You can use another mild vinegar like white wine vinegar, more apple cider vinegar, rice vinegar, etc.

Correct. As stated in the video, it's just to take the raw edge off of them. Fully cooked corn wouldn't be quite right for this kind of salad.
