Tomato Couscous with Capers:
1 (28 oz.) can diced tomatoes
1 1/2 cups uncooked whole wheat or regular couscous
2 tbsp olive oil
1/2 tsp salt
1 tsp oregano
1/4 tsp ground cloves (optional)
generous pinch of ground cayenne
2 tbsp small capers, drained (if using large capers, chop coarsely)

This is one of the simpler recipes in the book and because of that I've been wanting to try this! I finally made this the other day (with bulgur wheat instead of couscous) and it was really tasty, complemented the fattoush salad I paired it with very well. My sister isn't a fan of pickled things, but the capers didn't bother her at all. Thanks for making all these videos, makes me much more likely to try things from the Veganomicon!

I really loved this one too! And glad you're opening up a little more to the Veganomicon. I don't know what it is about that cookbook, but it didn't really appeal to me at first either.

This must be delicious wrapped in grape leaves! Adding the cloves is interesting, I'm a little reluctant but will give it a try.

I think the cloves add more fragrance than anything, but you could definitely leave them out and still be delicious.
