I loved this video and the fact that she uses traditional cheesemaking techniques is really cool. I noticed in the comments that it's difficult for people outside of America (like me) to order her stuff. I recommend her two cookbooks artisan vegan cheese and the homemade vegan pantry. I haven't read artisan vegan cheese but I assume it's about cheese. The Homemade Vegan Pantry has a really good butter recipe, really cool recipes for cheddar, mozzarella, feta and just a general beginner's guide to vegan cheesemaking. That book is really cool and has a lot of great plant-based recipes for staple ingredients. I use the library a lot and enjoy cookbooks (reading more than cooking) and lately I've been gravitating towards the plant-based and vegan cookbooks.

Being vegan and having a nut-allergy must suck so much.
@KristaaRae8 жыл бұрын
A person with a nut allergy's tolerance for nuts usually increases after they go vegan
@islandbee7 жыл бұрын
If they have a nut allergy, you shouldn't have a problem with something made with cashews. Cashews come from a fruit actually.
@VampireJack107 жыл бұрын
That could be quite dangerous advice - I'd recommend those with nut allergies to ignore KK there.

Cashews should be fine, but there is always the risk of cross-contamination.

I'm allergic to RAW Almonds. Surprisingly, Roasted almonds are fine. I have a somewhat severe reaction to cashews... And possibly pistachios. But yes, it does suck to have these reactions when Im trying to go vegan. Because the majority of the recipes have Cashews or soy. :/

Keep up the awesome work Miyoko! Thank you Vegan Zombie for helping me find delectable cheeses made out of cashwes. *hug* One further step on helping me become vegan in the middle of the US. I get the cheeses at Trader Joe's and Whole Foods in the SF bay area, not far from Fairfax. All I can say is that this is the REAL DEAL, as enjoyable as dairy cheese, that cashew is so good. I think Myioko's doing a very important job.. these cheese seems so good, as italian I think that the texture , the taste and the freshness as mozzarella is, we're not to the turning point :/ , mozzarella I think is something that for now we cannot imitate.. I hope one day..
@justinw17656 жыл бұрын
Mozzarella is such a boring, tasteless cheese anyways. I much prefer the tangier, more complex tasting ones.
@eponymousIme6 жыл бұрын
Her mozzarella is very close to fresh mozzarella. The texture is excellent. The only thing missing is the --- not sure how to describe it....cream flavor? --- that cow's milk imparts to the dairy version. For now, this is as close as you're gonna get to a vegan mozzarella, and it's totally worth it to have a healthier version that does not perpetuate cruelty to animals. Her smoked mozzarella is the bomb!
