Never ate much Moose meat, but had some hard salami made out of moose and it was the best hard salami I ever had. Ever get or find a pressure cooker(stove top or electric) they work great for necks of meat. Amazing how much meat you get even after trimming what meat you can off of them. Pressure cookers take less time to cook versus just throwing the neck in a pot and cooking down. My dad use to cut Diamond Willow near home for making walking sticks out of. Novelty shops and stores get good money for Diamond Willow walking sticks. My dad has one given as a gift to him that has a painted Indian Chief head at the top of the walking stick. Still uses it on his daily walks.

How many hours if you are smoking fish? I have smoked fillets with the skin on. Fairly thick. Here we call it on the half shell. Maybe 4 or 5 hours. Does that sound good. I used store bought smokers and the salt made them rust out in a season or two. Could only do small batches because that is all that would fit.. was going to try teepee but thought I needed special tarp. Good to see almost anything will work. Thanks for sharing.

Love these videos. Hey Andrew remember you were wondering about diamond willow in your old Smoking meat video? Diamond willow is the result of an attack by a Fungus, which causes cankers to form in the wood in response to the infection. It can happen to different types of Willow. The willow you are using is Red Willow I believe.

I really enjoy the vedios of every day life in the north. It is nice to see what goes on in other people's lives that are different from where I live. I do not need all the fancy video stuff(drone footage and stuff) just the real life going ons. That is why I started watching your vedios a few years back because it was real with no BS. I can understand how it can be a pain in the but to vedio and edit then upload but it is appreciated more than you know on my end. Just keep doing what you do and I will keep watching. When there is a long break between vedios I always wonder if you are ok or got sick or hurt so keep in mind a 4 min vedio saying things are good and you are ok is a relief to a lot of your followers. Take care and keep enjoying your life because we are enjoying it with you!!
