Larry, these grilled chicken legs look absolutely delicious. I think the key this recipe is the way you marinated the chicken. I like your Mexican inspired marinade, and of course you grilling techniques are always spot on. Nice job on the recipe !

Larry, I just saved this to my favorites! I watched the video twice, it looked so good! It's so easy and it packs a wallop! It uses every one of my most preferred spices! nice and simple! Never tried cumin with this... will do this asap this week. when i've used that italian dressing for chicken, i often then paint the marinade on towards the end of the cook... but without the dried spices, think it would burn? keep posting! like!

Nice cook. I love the zesty italian dressing for a marinade or even dipping sauce sometimes. Try marinating a piece of salmon but only for 30 min.

Always enjoy your vids but have a question re the Rec Tec. It's fueled by wood but looks like it puts hardly any smoke on the meats. Is the meat smokey?

19brandon66 Thanks Brandon! While it's cooking the Rec-Tec is misleading to most people, because you don't see smoke......but don't let that fool you. The smoke is as good as on any smoker I've had and that goes for a Gator Pit, WSM, Weber Kettle, Primo and Grill Dome. The only heat source for the Rec-Tec is wood, so as long as you have it on, it's burning wood, just like a stick burner. If you have your fire burning properly in a 100% stick burner you should see very little if any smoke. You will obviously see more smoke when you add fresh logs, but it should dissipate quickly. With all of this being said the Rec-Tec RT 680 has an 'Extreme Smoke button' if you want to add more smoke than normal to your food. Does all of this make sense? Hope it helps Brandon! Thanks again!! Larry, awesome job on those chicken legs.Ive used Italian dressing on chicken and fish,but you upped it a couple of notches with you killer spices. awesome job.a guy at work said he marinated his rib eye steaks in Italian dressing and said they were the bomb.never heard of that one..alwayas chicken or fish.

+Justin Reed 165º is perfectly fine with me, the 175º is more to cover people that do not cook a lot when watching my videos. 165º sometimes with give you a bit red or somewhat 'bloody' appearance by the bone on dark meat. I would reverse engineer this by adding all the dry spices ( minus the salt and base salad dressing) with a spoonful of yoghurt and marinate over night, then add the salt and salad dressing then let go for the afore mentioned 4 hours. Just sayin' Larry, just sayin' :)

***** Yoghurt increases the depth of penetration of spices into the meat. Try it yourself with with some chicken breast and ( so you can see it ) Turmeric or a curry powder, get 2 cubes of chicken cover one with just the dry spice and the other with the same amount of spice but mixed with yoghurt, whack them in the fridge for a day, then slice them in half, the difference in the depth of penetration is very noticeable. I first saw this on a TV show " In search of perfection " with chef Heston Blumenthal who did the same experiment
