Wow. It's been a while. Thank you for another video Clive. A tip if anyone wants it. Those bigger pieces of leftover ash are charcoal really. So I use them in the barbecue or even back in the oven to bulk up my main fuel.

Great to see you back Clive! I made myself an adjustable curved stainless steel ash puller and an ash box that fits directly into the door. It means that I can pull the ash out really quick without losing too much heat and pull the ash into the box (The ash box is about 5" deep and enough room above it to see what I'm doing with the ash puller).

These are great tips and tricks for keeping your oven clean between uses. One other advantage with letting the embers burn out naturally, and then leaving the ash in the oven until the next use, is that the ash is a natural dessicant, which helps keep your oven's internal humidity level nice and low between uses, which is good for the refractory concrete...

Thanks for this info. I have over time started to do the same methods as you do here, except placing the oven door on at the end. I will be doing that next time, Cheers. I did do a suckling pig a month ago and that dropped a lot of fat and I tried to catch what I could but it was impossible to catch it all. After cooking I remade the fire and later spread the coals, it was the only way to clean the oven floor. On a side note I made a small brick wall barrier between the pig and the hot coals during cooking and it really saved the pig from cooking and burning on one side. It did get a little burnt from the dome top but I caught that early and loosely place several layers of aluminum foil over the top as a shield and it worked fine. Move vids please.

This is a very useful video....I'm new to cooking in a wood oven and when I attempted pizzas for the first time, it went horribly wrong (I have since been successful and realised where I made mistakes) and there was food all over the oven floor. Followed this video and hey presto, clean floor again

I'm glad it was helpful. I've had my share of disasters in the wood oven, but the more you use your oven the greater your understanding of how it performs, and what it’s capable of, and your instincts will become more in tune with it when you’re cooking.

Much respect chef. I have an Ooni oven which I fire with oak. It does a fantastic job, but it’s nothing compared to your setup. I had the pleasure of taking a class from Andrea Mugnaini in Napa some years ago, which I highly recommend to anyone thinking of getting a wood-fired oven. I’m saving my pennies and hope to upgrade to a true brick oven soon.

Thank you for the video i found it very helpful. I have had a wood fired oven for about ten years now and recently someone bought a terracotta chicken brick for me. How would you go about using it in the WFO?

The recommendation for the chicken brick is to start it in a cold oven, and then heat it up. It would be an interesting experiment to try in the wood oven. More coming soon. Clive
