They just melt in your mouth! Delicious and soft pancakes with cottage cheese.

To cook pancakes (pancakes) with cottage cheese:
Pancake dough:
Large egg - 2 pcs.
Flour - 150 g
Sugar - 1-3 tbsp.
Vanilla sugar - 1 tsp
Salt - 1/3 tsp
Vegetable oil - 3 tbsp.
Warm milk - 500 ml
Curd filling:
Curd - 500 g
Egg - 2 pcs.
Sugar - to taste (I added 1 tablespoon)
Vanilla sugar - 20 g
Raisins - to taste
Butter - a small piece
1. Add a pinch of salt, sugar, vanilla sugar, vegetable oil to the eggs. Mix with a whisk, add flour and mix. Add warm milk. Leave the dough for 10-15 minutes.
2. Heat up the pan. Bake pancakes until golden brown on each side over high heat. Put the finished pancakes on a dish, cover with a lid so that the edges of the pancakes soften.
3. Add 2 yolks, sugar to taste and vanilla sugar to the cottage cheese. Blend with a blender.
4. Beat egg whites until fluffy. Add to curd and mix gently.
5. Put the filling on the pancake and form an envelope.
6. Put in a mold greased with butter. Top the pancakes with butter.
7. Bake for 15-20 minutes at 180 degrees.
