Today is my second day in the wonderful food city that is Da Nang, Vietnam and we are getting right out of our comfort zone. We're heading out for two dishes that all the locals here have told me that foreigners like me can’t eat. The first stop is a funky fermented fish noodle dish called bun mam at the most famous place for this dish in Danang called Bún Mắm Bà Đông. This tasted almost exactly the same as plata and pa dark in Thailand / Laos and is seriously pungent!
The second stop is for some bun dao mam tom which is a pungent fermented shrimp paste sauce served with pressed noodles and a variety of herbs and other goodies to dip.
I'm not sure why every Vietnamese person I asked said that I shouldn't eat it as it's too 'stinky' but this was probably the best thing I ate the whole time I was there.
If you are travelling to Danang, or Saigon or especially Hanoi, I would 100 percent say you have to try bun dao mam tom, it's amazing!

Vietnam has the most varied and delicious food anywhere. I live in Thailand and love the food, but compared to Vietnamese food, Thai food is boring. If you hadn't guessed, anh yêu Việt Nam ❤

Your Vietnamese is fine Gary. Kudos for trying new things and attempting to speak another language. I know it’s discouraging when people giggle, but know they’re not doing it in a mocking way. Makes locals happy to see foreigners attempting to speak their language

@gary: Vietnamese people are friendly. One trick for tourists to clear out any possibile misunderstandings is to make clear about your your curiosity and the intention in filming & ask for permission. That would eliminate akward moments & most of them will welcome you with open arms!

The first dish he had is a regional dish of Danang, rarely found even in other parts of Vietnam, similar to "cao lầu" in Hoi An. Fermented anchovies sauce is like the final boss of stinky but ultra umami Viet sauce, along with fermented shrimp paste in the second dish. While this "bún mắm" is dry noodle, there's another dish with the same name but almost completely different that is very popular in the south, with seafood, roasted pork in a fermented fresh water fish sauce based broth. Hopefully the weather is nice when you there!

I think next time you can ask the restaurant to put the fermented sauce on a side, that way you can control how much or if at all you will put in your bowl. You can just eat it with the thick fish sauce and no fermented sauce. 😊

hi Gary, if u can handle the "mam tom", it will take your food to the next level. add chili to your mam tom, add lime to it.. stir until it bubble, then u r set

People do get happy when you are willing to try the "difficult" dishes. My first morning in Saigon, the bún riêu ladies in the market couldn't wait to see if I could handle mắm tôm, and mixed some up for me. They made a bit too much of a big deal about it when I liked it 😅 and decided that I needed a Vietnamese wife. (Somehow I think that wasn't really about liking mắm tôm tho.) 😉

For bun dau mam tom you have to use your chopsticks to stir the mam tom up first. It's not original but a mix of mam tom, sugar, oil, chilli, vinegar to reduce the salty and fishy.

I saw the second half of this about a week or so ago when you first posted it, so you know I'd eat that. I'm even more interested in the first one here, the bun mam as a breakfast dish. I would definitely have that along with all the condiments and peppers. I'm actually growing some of those long peppers (not sure if they're Vietnamese or Thai) and they should be ready for tasting in another two weeks or so. I'll let you know if they're as hot as they're supposed to be. Enjoying these Da Nang videos, not sure if I've seen them all yet but keep 'em coming.

Wow, looks awesome! been researching SEA for 2 years planning a move, and Da Nang, VietNam was my pick. $150 for a nice apartment close to the beach. And of course, THE FOOD!!! When I asked you before, you said for food, skip Philippines, so I narrowed it down to 2 places. Jomtien-Pattaya or Da Nang. What say you my friend? AND, Tiếng Việt của bạn nghe hay đấy!

Ohhh that's a tough one. Although I'm not a massive Patts fan, there is some great food there and it's so easy to get to other places in Thailand. The beach is much nicer and cleaner in Danang if that means anything to you?

You can eat bún mắm at everytime in a day. My mom makes this 4 or 5 times in a month because eating too much mắm will cause high blood pressure

Just so you know...fermented fish sauce is fish sauce before it has been filtered. Just think of it as 'virgin" or unfiltered fish sauce!

do you dislike "umami" because it sounds pretentious? i would understand that, because the word wasn't around when we were young, but i think you should feel fine about it because it's one of the basic tastes. any other word would be less precise. just a newer word than "salty", "sweet", "bitter", "sour"
