Cooking for myself is boring as hell and I'm rarely happy with the food I make. I'm easily the most self-deprecating chef of everyone I know. If even one person asks me for a dish I get so excited and I put everything I have into it. I'm pretty solid in the kitchen and people praise my food so that helps me be not so hard on myself.

I come from a family that's only part Midwest, so my first thought was if you have a mandolin, slice the potatoes thinly and layer them on top, so they'll form a crispy top layer for more texture.

I can do minimum effort food for myself maybe occasionally do something nice for myself, but if I've got friends coming over then I'm whipping out every technique and skill i have. Big portions of restaurant grade food and no one leaves my home without full bellies and tipsy heads. We eat and drink for results around here! Food in one hand, drink in the other, and merriment is mandatory!

Some people just have sensitive mucous membranes. Like I do. My upper spice tolerance is around the level of Spciy McNuggets when McDonald's had them. They're almost too much for me spice-wise. And it's not even "toughness" or whatever, like when someone like me eats something spicy it's not "haha spice challenge funny can't handle" it just hurts, not even burning sensation, but just pain.

I moved to the midwest and it is *astonishing* how impossible it is to get decent spicy food. Even at asian restaurants, usually a haven for spicy food on the west coast, it's nearly impossible in the midwest.

I can't criticise Giri for burning rice anymore for I too have sinned. I cooked rice the other day and left it on a baking tray so I could make fried rice the next day, but the tray started to rust from the moisture in the rice so the rice got rusty. I still used it in the fried rice but I feel like a barbarian now.

My opinion when frying beef like this in a bigger pot. Wait until you boiled of the water that seeps from the ground beef and for the beef to fry a bit. You'll get a distinct change in smell from "boiled" meat to "fried" meat. This is when the meat is done. Then you can add spice, cream or whatever. At first it should always just be onion and beef. Or just beef. For anyone, here's my swedish ground beef sauce recipie. My "childhood" food. 1. 1 kilo of ground beef. Preferably fry this in a pan first then add to a bigger pot where you'll make the sauce/stew. 2. 1-2 medium size onions. "Adjust amount according to taste." Can be fried with the meat otherwise just cook it in same sepperate pan after you're done with the meat. dice FINELY like you should barely notice there's onion in the damn sauce. 3. 5 dl of cream, add a bit of milk after if you want it less thick. The cream is the sauce. Add the cream after minced meat and onions are done frying. 4. 1-4 garlic cloves. "Adjust amount according to taste." Crush and add to sauce later. 5. 5-10 cl of mushroom soy. "Adjust amount according to taste." add to sauce 6. 1 meat/beef bouillon cube add to sauce 7. Add ketchup, black pepper, bellpeper, mushroom and/or salt after what suits your taste. Add a bit, stir and taste until you're satisfied.
