My mother wasn't a canned or did she work a garden, me on the other hand, was even as a child, watching my neibors dad digging his garn, and I did the same, the best I could. I loved it. I tried water bath can canning and really loved that too. Now as an adult finally got a Presto pressure canner,

Just catching up on some of your old videos. First of your videos I ever watched showed me how to make those bowl cozies for microwaves. Phenomenal! Here's an easy fix for the ground beef. Instead of using ground beef, use chopped beef instead. Take chunks of beef and throw it into a food processor, and chop it down to about the size of a pea or just slightly smaller. Ground beef when boiled has no connective tissue left intact to hold it together so it turns into a nasty grainy mess. Chopped beef however, retains that connective tissue, and therefore retains a palatable texture. You can also pack quite a lot of that into a canning jar.

@@elinorreinhardt1050 eat in pints are canned for 75 minutes , quarts are canned for 90 minutes. It does not matter if it is beef, chicken or pork, all meat is canned for the same time with the exception of chicken with bones that is canned for less time. I am not for sure of the time but you can look it up on the sites that was mentioned in the video or of course in the books if you hav e them.

Good to see someone who has taken the time to learn something and then pass it on. I have seen so many KZbin channels where the content creator is talking about ignoring food safety guidelines for some ridiculous reason and they obviously don't understand what they are talking about. I remember my mother canning when I was very young, and she continued doing it until she was no longer able. I started doing some simple canning and pickling a few weeks ago and enjoy finding good information. Thank you!

I lived in Morocco and there was a corn salata that we ate several times a week and it might be called the relish in America but it was definitely not sweet sweet. I'm going to can some this summer and I gave the recipe to a well-known author who was working on a children's charity cookbook a few years ago so I'm happy to share the recipe if you would like it or anybody here would like it. It's quite simple. :-)

I was born and raised in Maine and we wait every year for those fiddleheads to come out!! My dad didn't care for them but my mother and I went wacky over them. I left Maine for a long time and worked all over the world them now back here again probably to stay. I will travel but I won't live in another country again. It was even a song on the radio about fiddleheads when I was little! Lol

For Chili use the beans then use the cubed roast and shred it... Not a fan of hamburger in chili.... of any type. I am so excited getting ready to do my first... And really love this video on resources as well.

I'm just a beginner canner (just started about 4 months ago) but fell in love with it immediately and have been canning meats and meat meals. I also love to can sweet potatoes, to go with my canned Shepherds' Pie! Not broth though, I consider that to be a waste of jars, especially now, when we can't get jars and lids. Likewise other vegetables; I don't like them canned, so I dehydrate them and then vacuum seal them. I do love to use my chicken carcasses to make bone broth though, and then I just boil it down the next day, to make 'pocket soup.' That takes up MUCH less space then, and pretty much lasts forever. I always have a bottle of that near the stove so I can throw a few pieces into whatever I want broth in. What a great pantry you have (yes, I have pantry envy)! My favorite stuff to can is Ugly Chicken and Ugly Beef; I guess I'm an ingredients canner. Thank you so much for all the references; I have subscribed.

I checked here in Hawaii, and when I asked about the master preserver program or any programs on canning foods and they looked at me like I had 3 heads or something, lol. People just do not can foods here, it's strange. It must be part of the culture here because no one has a food pantry here either with anything more than a day or two worth of food. As a person who tries to teach people how to prepare for disasters, this drives me insane.

I agree, the ground beef is a bit on the strange side. I have found that using it to make taco meat however we really enjoy. It is the same taste and texture of the tacos you get at taco places. I was sort of astonished. I only figured this out a couple of months ago. I told canning friend that I was never going to can ground beef in the amounts that I did the first time, but I will sure do a canner just for tacos. Your pantry is very pretty.

One thing I always can, homemade cranberry sauce. (recipe from the Ball Fresh Preserving webisite). It's SO much better than weird can-shaped sauce you get at the store. It's delicious with Turkey (of course) it's also great with soft cheeses like brie or stirred into a bowl of oatmeal. I'm still a newbie canner, but cranberry sauce is a definite "go to".

Nope, it's not an approved process. I know lots of people do it and have done it for years and maybe it turns out ok but there has been no specific testing to ensure it's safe so I have to say no. Cheese is in the same boat. I see people canning cheese but still no research to make it an approved process. Until it is approved I'd rather just buy powdered from a good company like Thrive.

Well, I’m going to go against the crowd and say I like using canned hamburger. I didn’t like the raw pack I did, but the the browned was not bad if, before using, I browned it in a hot skillet before adding it to spaghetti sauce or goulash. The thing my family, and I, hated was smelling the canned hamburger as it was being opened so, now I turn on the stove vent, open it under the vent and pop it in the hot skillet. No one has said anything about the hamburger since I started doing this. It is sooooo handy to be able to grab a jar and have dinner on the table fast, that I had to figure out a way to make it work. So far, no ones the wiser!

Did you happen to make the Sweet and Sour Pickled Red Onions from the new Ball book? I made it after Mandy from Moore2Life did and raved about it (but obviously way before she did this collab and gave a poor review of the finished product). Haven't cracked open a jar yet, I'm worried I wasted all those onions. They sure did taste amazing going into the jars. Your canning storage is just beautiful and I love that you used some add-on wire shelves to increase your space. I'm going to give that a try too.

Canned hamburger 2 and one half years ago. Still got it. It smeĺls like dog food when you open it. The canned hamburg in tomato sauce smells better and tastes pretty good, but the hamburger boils down to a fine consistancy that i dont much care for. I stick to cheap cuts of beef, and chicken breasts canned in chunks. Green beans are always good and lots of tomatoes for different uses.

The way around the gross texture and feel of canned groundbeef is to brown the meat, drain off the fat and season with salt and pepper, diluted beef boullion and tomato paste. Keeping it loose like meat sauce for spaghetti. Following the current USDA rules for cooked beef. It isn't as squishy as what you did there. And it works for quick dinners. Tacos, chili, beef stroganoff.

Good tip! I did use some of my canned ground beef recently and I browned it right out of the jar then added the other ingredients for chili. It turned out pretty good.

I'm with you on the hamburger. First and only time I ever canned it even the dog wouldn't eat it. Loved your video!

You wowed me! First I loved seeing you. Thanks for the reminder about the extension office. I was thing about agetting a new canning book, but I think I will just put that money to ink. I have a comb binder

I agree with you about hamburger. I have some, but use it for chilli. I use half fresly browned meat and half my canned to get rid of it. Some I did like more was ham. It tasted like some burned. I'm thinking it might be, because it was a store bought ham,you never really know what they put in it.
