Paella means frying pan in valencian language. "Arrós en paella" is rice cooked in a frying pan. "Paella valenciana" refers to the recipy to cook rice in a pan from Valencia (city not region). There's also "paella alicantina", la paella típica de Benidorm con espinacas y boquerones, etc. They are all "arròs en paella". Near the coast we cook rice in paella with seafood and inland they cook it with meat, mainly chicken and rabbit. Never pork or beef! Kind regards from Benidorm (Alicante).

Ah, that explains why the rice dishes I had while visiting Alicante, Cartagena, Palma de Majorca, and even Valencia (first time eating pael.. rice as part of a tour of the Lladró factory called their dishes paella. They had that dictionary. Thank you for the clarification. 😊

It's not "that" dictionary, it's the DRAE written by the RAE, the Royal Academy of the Spanish language, the issue comes with some valencians being the most entitled thing on earth, they'll battle you for hours just to prove that they have the best dog excrements in Spain, and probably that the first dog shit was planted there, it's crazy how they believe anything is better and or was invented in Valencia, because they truly believe what they say, it's not a region full of internet trolls, they genuinely believe what they say, even if it's the biggest nonsense ever

La pizza margarita fue la primera pizza que se hizo en Nápoles 1889 y es la pizza auténtica. Por la misma regla de tres, una pizza de jamón y queso sería llamada “torta de pan con tomate, jamón y queso”. No se le podría llamar pizza ya que lleva jamon. Yo creo que habría que hacer como el menú de las pizzas: Pizza pepperoni Pizza Fiorentina Pizza marinara Pizza carbonara Etc…. --------- Paella Valenciana (original) Paella de Marisco Paella de verduras Paella de conejo y caracoles. La historia cuenta que en 1889, a la llegada del rey Umberto I y de la reina Margherita a Nápoles; Raffaele Esposito, el mejor pizzero de ese tiempo, preparó tres variedades de pizza para ellos, incluyendo la pizza tricolor en honor a la reina y a la bandera italiana.

The problem with calling other dishes "Arroz de pescados y mariscos" is that it is vague. You wouldn't be able to differentiate a saffron scented rice with tomato and soccarrat with seafood from say, Thai jasmine rice with fish and seafood. It's like saying you had chicken and rice. Did you have it like the Halal Guys chicken and rice or Hainanese chicken rice or was it Thai sticky rice with grilled chicken? If you're going to say it's not paella, at the very least, you should call it "Valencian seafood rice" or something to give some indicator.

And that's from the time when pesticides weren't used and those animals were safe to eat. And I guess the author forgot to mention that that was right after the civil war, when food was rationed and poverty, rampant. As most everything, the dish was originally a laborers' dish that eventually evolved. And leave my hometown out of this ...

Οκ, probably overthinking this but why would you use an adjective if no other paella exists? It's superfluous. But, if other paellas exist, then you do need to use an adjective like Valenciana. If you find yourself in Valencia, then, because of the overall context, you could just use paella.

Because Jose Andrés is wrong, and many people in Spain are too. I'm from one of the regions where paellas are made. It's not traditional from all Spain but specifically the Spanish Eastern Coast. Valencia is probably where they're most popular but they're also traditional from Catalonia and Mallorca. "Paella" means pan in Catalan, the native language of those regions. The word was probably adopted later in Spanish because the main term for pan in Spanish is "sartén". There's other paellas, only in Valencia there's dozens or even hundreds of recipes. Paella Alicantina has seafood, as just one of many examples. My favorite version is cuttlefish and pork, it's very popular here in Catalonia.

@@AnaInTh3Sky People in Valencia are welcome to have whatever standards they want, but they can't tell the rest of the world they have to follow the standards for how they define food. The same reason people from Naples can't tell people from Chicago that deep dish pizza isn't pizza. Or people from the American South can't tell Korean Americans they can't call their food Korean Barbecue because it's not slow smoked. Italians can say it's not Neapolitan style pizza, but that's it. Jose Andres is a chef, his specialty is cooking, not linguistics. Words take on the meaning of however people use them, not just whoever claims to have "invented" it.

También puedes llamarle cocido a un plato con lentejas si quieres, pero no es un cocido. La paella nació en Valencia, y como tal es lo que es. De hecho, en Valencia está la paella y, a todo lo demás, le llamamos "arroz de..." o "arroz con/a": arrós del senyoret, arrós a banda, arrós al forn, etc. No le llamamos paella a todo.

No hace falta que seáis tan snobs con la paella, el resto también tenemos platos que luego cada uno en España cocina como le sale de las narices. La paella es un plato de comida no una obra de arte que haya que proteger, no se por qué os fastidia tanto lo que cada uno haga en su casa. Y una tortilla de patatas no deja de serlo por llevar cebolla, jamón o cualquier otra cosa. Da igual quién la inventara. 🤷🏻♀️

@@sadotter1 el empeño de usar la palabra "paella" que es además un termino en Valencano es el vuestro. Si la paella valenciana es la de pollo y conejo y a lo demas se le llama "arroces de..." no cuesta tanto hacerlo correctamente. El problema seguramente no seria tanto si el chorizo y otras aberraciones no se hubiesen incorporado en demasiados sitios en España. Al distorsionar un plato tradicional tanto es normal que muchos lo quieran defender. De lo contrario si todo vale nada vale. Por ejemplo en inglaterra nadie sabe lo que es una Paella pero todo el mundo cree poder opinar cuando aqui he probado supuestas paellas con chorizo, almejas y ademas picante. Entiende que las cosas se hacen por una razon.

Los valencianos son un poco especiales con la paella digamos , siempre que una persona no valenciana que haga la paella y cambie un solo ingrediente va decir que es arroz con cosas , pues para mí hay muchos tipos de paella , marisco , pollo con conejo , de verduras , para mí todo son paellas y riquísimas todas

Aquí en Valencia hay muchas clases y variantes de arroces (arroz con acelgas, arroz al horno, arroz en tot-junt , arroz del senyoret, arroz a banda, arroz negro , arroz con coliflor y costillas , arroz de costillas y ajos tiernos ....) pero en general llamamos Paella a la Paella Valenciana con unos ingredientes determinados y algunos complementarios (alcachofa, pimiento rojo, caracoles, romero ...).....es como si al cocido madrileño empiezas a meterle cosas raras y porque se haga en una olla pues le llames a todo igual

Well, as a Spaniard that has cooked paella dozens of times and considers himself pretty good at making them, I think this is kind of a pedantic argument. First of all, the term "paella" in Spanish is a loan term from Catalan, the native language spoken in Valencia. The guy who cooks the paella in the video has a Valencian accent and he probably speaks Catalan (the Valencian dialect more specifically) as a first language. In Catalan "paella" means pan. Every kind of pan is a "paella", even an egg or a steak pan. And everywhere in Spain you'll find that restaurants call every rice made with this particular pan a "paella". In my region (Catalonia, which also speaks Catalan as you can assume) it's perfectly acceptable to call "paella de mar" to a seafood rice. Or "paella de muntanya" to a meat and vegetables rice. You can also call it "arròs de mar" (seafood rice) or arròs de muntanya (meat and vegetables rice). I think the issue comes from the fact that Paella Valenciana (Valencian Paella) is specifically a chicken and rabbit paella, no seafood, no pork. So it's incorrect when many people claim that Paella Valenciana is a seafood rice dish. But it's not like Paella Valenciana is the only acceptable recipe, there's literally hundreds of rice dishes only in the Valencia region. And even the Valenciana has some variety, some people don't put rabbit and some put artichokes or snails. So there's some leeway it's not just one specific version. I like Valenciana but it's not even my favorite version. It's a bit sad that people get so worked out about one single rice dish when we have so many ones. My favorite is Paella with Cuttlefish and Pork btw.

This is absurdly misleading and disingenuous. I am not a Spaniard so some will argue I have no place to comment; but traditional paella doesn’t even have a recipe. If you want to retitle this as “How to identify ‘True Paella Valenciana’” then I’m ok with that. But, “real paella” has a much broader historical explanation. Thumbs down!

Paella is descended from pilao or pilaf. The use of saffron shows a Middle Eastern origin. I like this rabbit and chicken paella. chorizo in paella is just plane weird.
